Herringbone Now Serves the Best Weekend Brunch in Las Vegas

Acclaimed chef Brian Malarkey’s fresh Southern California seafood restaurant, Herringbone, opened its newest location inside the ARIA hotel late last fall, but with the warmer weather here and their spacious patio now open, guests are finally getting to experience the full Sin City concept that was originally envisioned. Another key piece of that plan is their excellent new weekend brunch service, as Herringbone’s executive chef, Geno Bernardo, has expanded upon Malarkey’s menu offerings with some fresh dishes and cocktails that are the epitome of what a great weekend brunch in Vegas should be about.

The main dining room inside is gorgeous, but now that warm weather is here, brunch is best enjoyed by way out the plush outdoor seating that overlooks ARIA’s pool. There are also many cozy couches towards that provide a more intimate dining experience as well. No matter where you sit on the patio, you will feel completely transported from The Strip to some place much more tropical. The first order of business when you arrive is starting off with some of Herringbone’s signature drinks that are offered during the brunch service. The strawberry margarita pairs fresh berries and Patron silver tequila for a refreshing cocktail that still has plenty of bite, perfect for sipping on the patio. The best value is definitely the bottomless Bellinis, which are unlike any you will find in the city as the bubbly is paired with either fresh strawberry or peach puree to make for the ideal brunch libation. Fans of a proper Bloody Mary won’t be disappointed and there are several different options to pick from. Pair it with an order of the sweet and savory maple bacon, which comes with Brûlée banana, plus a sweet banana mousse dipping sauce. 

Before you dig into the main course menu, be sure to sample some of small plates, such as the avocado toast along with something fresh from the Salt & Brine bar. The Tuna Poke is a popular selection at Herringbone due to the freshness of their Yellowfin tuna, which comes paired with shoyu, Maui onions and Macadamia for a great shared plate. You also can’t go wrong with the King Crab, giant shrimp cocktail or succulent Maine lobster. Herringbone is a restaurant that dispels the long-held myth that there is no fresh seafood to be found in Las Vegas. Everything that comes out of chef Bernardo’s kitchen has been carefully sourced and then prepared to perfection before it hits your plate. In addition to the new brunch offerings you can still enjoy plenty of fresh seafood favorites from the main dining menu, including their catch-of-the-day which comes with organic vegetables that are right out of the garden.

When it comes time for the main courses, we’ll be honest, you will have a hard time picking, so we advise trying a few different plates and sharing as the portions are plentiful. This way you and your friends can get sample the delicious diversity of the brunch menu. The crab cake eggs benedict are a must and would make anyone from Maryland proud as these real crabcakes will literally melt in your mouth. When combined with a flavorful hollandaise sauce and poached farm fresh eggs, it’s easily one of the best eggs benedicts you will find in Sin City. Another standout is the bacon and egg ravioli. With this rich breakfast dish, you will enjoy two large homemade ravioli that have a poached farm egg inside, which are each topped with chunks of thick-cut bacon and a savory sauce. Craving a burger with your breakfast? The loco moco dish combines a thick Kobe beef burger with a fried farm egg, rice and gravy for a very hearty dish. Oh and if you’re a fan of grits, Herringbone’s shrimp and grits bowl gives a gourmet spin on this breakfast staple. If you’re nursing a hangover from a wild night on The Strip, Herringbone has the perfect cure with their spicy kimchi tofu stew. This flavorful dish is loaded with spices that will have you feeling right as rain by the time you finish. 

After indulging in a gourmet brunch spread like this, you might as well go all out by capping the meal with one of Herringbone’s delicious dessert offerings. The coconut carrot cake served with ginger cream cheese is a big hit as well as the Herringbone Sundae that comes loaded with thick chocolate, caramel macchiato and vanilla bean ice cream, plus sea-salted blondies, mashmallow cream cocoa nibs and creamy caramel. But our favorite has to be the gourmet jar of cookies. You’ll be brought a full jar featuring the chef’s selections of the day paired with a big jug of ice cold milk for dipping that Is actually closer to a milkshake it’s so creamy. Sometimes it’s the simplest desserts that are the best, especially when they are served this fresh.

Herringbone continues to stand out as one of Sin City’s best new restaurants due to the organic ingredients, superior seafood selections, first-class service and the beautiful ambiance that they surround you in. With their spacious patio now open and a late-night menu on the horizon to align with ARIA’s Jewel nightclub opening, there’s always a delicious reason to stop in.
