At the very top floor of the Mandalay Bay hotel resides the House of Blues’ famous Foundation Room, a supremely cool Zen lounge that is one of the best places in Las Vegas to spend an evening while overlooking The Strip.
While the House of Blues is known for its raucous rock and roll concerts and Las Vegas residency with Carlos Santana, when you head to top of the hotel and step inside the Foundation Room it’s like entering into a luxurious VIP haven. With exquisite rugs that flow throughout the entire space, spiritual-chic décor, warm mood lighting and crackling fireplace, this place still sets the bar for Sin City cool. Make no mistake though, this is not a Vegas nightclub, as it caters to a much more discerning crowd. There are discerning DJs playing every night, but this is a place to dine and drink as opposed to dance on tabletops.
The dinner menu from chef Jonathan Snyder is first-class. When coupled with the stunning view from the dining room, the Foundation Room is a great place to bring a date. Start off with diver scallops and crab aguachile or the decadent seafood tower, which includes a half lobster tail, king crab claw, jumbo prawns and oysters. The entrees are all gourmet dishes and cater to both carnivores and seafood lovers. The popular king salmon dish comes with poached baby fennel, morel mushrooms, sugar snap peas, roasted fingerling potatoes and drizzled with sweet champagne vinaigrette. One of our favorite dishes is the rack of lamb with smoked eggplant puree, cumin roasted carrots and za’tar vinaigrette. You also can’t go wrong with the dry aged boneless rib eye steak, New York strip or center cut filet options either should you be craving something a little more hearty. This Valentine’s Day, the Foundation Room will be having a special 5-course Prix Fixe menu for two that also comes with complimentary glasses of champagne. So lovebirds will definitely want to take advantage of that.
