One of 2015’s most anticipated new restaurant openings, Herringbone, finally opened its doors inside the ARIA hotel in late December. Herringbone comes from the mind of acclaimed chef, Brian Malarkey, who has garnered fame from being a Top Chef finalist as well as regular appearances on the Food Network and Travel Channel. Malarkey isn’t just a celebrity chef. His restaurant concepts, Searsucker and Herringbone, have received rave reviews. Now Malarkey has brought Herringbone to Las Vegas with a beautiful new location inside the ARIA hotel.
Herringbone is famous for pairing the freshest seafood and meat selections with seasonal produce for creative dishes of the highest flavor. From giant Maine lobsters, to fresh oysters, king crab and bay scallops, everything is prepared and served to perfection. We recommend starting things off with something from the “cold fare” section of the menu, which includes shrimp ceviche served Baja style and freshly prepared crudo, sashimi, carpaccio and tartare options. For the “hot fare” appetizers, don’t pass up the crab cake poppers, which would rival anything found in Maryland. As for the entrees, whether you’re craving seafood or a prime cut of steak, there are a number of dishes you’ll be dying to try. One of the most creative dishes that Malarkey has conceived is the seafood spaghetti, which includes generous portions of lobster, crab, shrimp and scallops, which when paired with the spicy tomato sauce is a taste that will have any seafood fan feel like they’ve died and gone to heaven. Don’t sleep on the lobster mac n’ cheese either, which comes with creamy gouda and slices of apple. The seared yellowfin tuna and ora king salmon dishes are also highly recommended. For the carnivores, you’ll be thrilled with the steak options, as there are a number of excellent aged and organic cuts to choose from. The Mary’s roasted chicken has already proven to be an instant fan-favorite and comes served with creamy polenta, roasted mushrooms and Herrinbone’s addictive, “crack sauce.”
Don’t get too full though, as the dessert menu here is a must! Herringbone has fun dishes like coconut carrot cake and an adult root beer float that are perfect to cap off your meal. Our personal favorite has to be either the jar of cookies, which are freshly baked chef selections that come served with a glass of milk or the notorious Herringbone sundae, which just might be one of the most decadent new dessert creations in Sin City.
A night out at Herringbone is a true fine-dining experience of the highest order and it’s tough to call it just a “meal.” When it comes to savoring fresh seafood in a beautiful environment, Herringbone is poised to become the next great Sin City restaurant in 2016.
