But first, a primer, since this drink is still rather new to American palettes. Sake is an alcoholic drink brewed from rice. Even though it’s brewed like beer, it’s not made from a grain. And technically it’s not a rice wine either. Like wine though, sake can be graded. The more the rice is milled, the better the sake will be. Milling removes the fat and protein from the grains, leaving behind a cleaner, more elegant flavor. About 85 percent of sake is the normal table kind (futshu). The next-higher grades are honjozo and junmai; followed by ginjo and junmai ginjo; and then the highest are daiginjo and junmai daiginjo.
Drink your sake from a glass instead of masu, a box made of wood. And good sake should be served like revenge, cold.
