My newest cocktail obsession comes courtesy of Warren Street Bar & Restaurant.
Located inside the stylish Warren Street Hotel in Tribeca, the all-day dining destination has become known for its polished take on European brasserie classics, along with a cocktail program that is every bit as thoughtful as the menu. One standout is Violets Are Blue, a floral-forward cocktail that combines butterfly pea flower-infused gin, Champagne liqueur, lemon verbena tea, dragon fruit liqueur, and fresh citrus for a drink that’s as beautiful as it is balanced.
The timing couldn’t be better. As bars around the world celebrate World Gin Week, taking place June 13-20, cocktails like Violets Are Blue showcase exactly why gin continues to captivate bartenders and drinkers alike. Elegant, versatile, and layered with botanical complexity, the spirit serves as the perfect foundation for creations that are both visually striking and beautifully balanced.
While its vibrant violet hue may initially catch your eye, it’s the combination of bright botanicals, delicate florals, and a silky finish that keeps you coming back for another sip.
“While Violets Are Blue was originally inspired by the fresh, floral qualities of spring, we designed it to be enjoyed year-round,” says Henry Pineda Jansen, Head Bartender at Warren Street Bar & Restaurant. “We wanted to create a cocktail that felt elegant and timeless, highlighting delicate floral notes and bright botanicals in a way that works just as beautifully in the warmer months as it does throughout the rest of the year.
He adds, “What makes Violets Are Blue unique is the way it brings together the flavors of gin, rose, and Champagne in an unexpectedly smooth and balanced cocktail. Rather than relying on bubbles, we create our own Champagne liqueur in-house, allowing us to capture the character and complexity of Champagne while maintaining a silky, refined finish.”

How to Make Violets Are Blue

Ingredients:
1.5 oz butterfly pea flower-infused Botanist Gin
0.25 oz Hendrick’s Flora Adora Gin
0.75 oz lemon verbena tea
0.5 oz Dragoncello (dragon fruit liqueur)
0.75 oz Champagne liqueur
0.75 oz fresh lemon juice
1 dash cucumber bitters
Edible violet flower, for garnish
Method:
Add all ingredients to a cocktail shaker with ice. Shake vigorously and fine strain into a chilled sour glass. Garnish with an edible violet flower and serve.
