If you’re looking for fabulous pizza in Dubai, then look no further than Pitfire Pizza in The Greens. It’s located not far from Choithram’s, and it’s a smaller, independent pizza place. The vibe is somewhat of a hipster, rustic feel, but the unusual and organic, locally-sourced toppings make Pitfire Pizza appealing to a higher-end crowd looking for a more casual place to socialize. The place is rather small, but once you taste the pizza, you’ll see why locals love it so much.

The folks at Pitfire Pizza describe the style of their pizza as “East Coast meets Neapolitan,” which makes it quite a bit different than most other styles of pizza you will find in the UAE. They use Italian Caputo 00 flour in the crust and mix it with a dough recipe for New York-style pizza, and they take pizza crust very seriously. To the folks at Pitfire, making the crust is an art as they mix up a new batch of dough every day and then proof it for 48 hours so that the crust comes out “big, puffy [and] charred and with “lots of character.”

The mozzarella is as fresh as it can because it comes from Italian artisan cheese makers who make it in Dubai and deliver it to Pitfire Pizza every day. The pizza makers then bake the pizza in their gas-fired “deck oven,” a type of oven that is commonly used to make New York-style pizza.

The pizza at Pitfire is truly unique as they use some pretty unusual combinations of toppings and offer seasonal specials. In addition to the traditional sweet Italian sausage, they use organic, locally-sourced vegetables and make most of their toppings in-house each day. Among the more unusual toppings they offer are a balsamic glaze, dates, honey Dijon dressing, bresaola, pine nuts, capsicum, goat cheese, and bocconcini cheese. Diners can either pick their own toppings or choose from one of the many signature topping combinations on the menu.

Pitfire Pizza also offers some pasta dishes, large salads with very interesting and unusual ingredients, side dishes like garlic knots or buffalo chicken wings, and dessert items like apple pie and lava cakes.
