Hailing from Ireland, Gleeson has worked at two Michelin starred restaurants in London and Dublin, and most recently as the executive chef at Marco Pierre White’s Wheelers in Dubai. At Monte Carlo Beach Club he will serve cuisine that is line with the venue's French Riviera spirit.

Located down The Walk near Amwaj Rotana, the concept is the brand's second space in Dubai and features a classic menu of Lebanese street food, grills and mezze.
