On Tuesday, June 25, 2013, Two (1132 W. Grand Ave.) welcomes renowned winemaker John Terlato of Terlato Family Vineyards for a special dining event, prepared by Executive Chef Tom Van Lente and his culinary team. The meal features the restaurant’s signature butcher-shop inspired cuisine, with each dish expertly paired with a selection from the Terlato family wine collection. The event will include a welcome reception with wine and passed appetizers, providing guests the opportunity to meet and mingle with Terlato and Van Lente. “We’ve always had an appreciation for Terlato wines, so we jumped at the opportunity to develop a menu that complements their diverse brand portfolio,” says Van Lente. “It’s especially exciting to have John here at the restaurant to enjoy the paired menu in-person and visit with our guests.”
Van Lente regularly works with local farms and is utilizing many regional purveyors for this dinner, including Swan Creek Heirloom Farms, Nichols Farm, Mick Klug Farms, and The Plant. The event features a Terlato Wine-paired menu including:
Lobster, halibut, and scallop sausage with caviar on brioche
Chimney Rock “Elevage Blanc” Sauvignon Blanc-Sauvignon Gris blend
Seared sea scallop “elotes” with local corn, fresno chili, lime, and crispy coppa
Rutherford Hill Chardonnay
Smoked suckling pig with roasted green garlic purée and a honey-butter biscuit
Sanford Pinot Noir
Black pepper tagliatelle with beef short rib ragù and shaved parmesan
The Federalist Dueling Pistols Zinfandel-Syrah blend
