Check Out The Hottest New Restaurants Coming To The Las Vegas Strip

Foodies don’t have to look far in Las Vegas to find a fantastic meal. With restaurants rivaling the world’s top food spots and plenty of original concepts from celebrity chefs, the city has grown into a first-rate dining destination, and it just keeps growing.

From seafood to Szechuan, here’s a look at the hottest new restaurants on the Las Vegas Strip, as well as a few that will open before the end of the year.

The much anticipated NoMad Restaurant will open on November 14 at the ever-evolving Park MGM and its boutique hotel within a hotel, Nomad Las Vegas. A signature concept from Chef Daniel Humm and restaurateur Will Guidara, NoMad Restaurant will feature American classics, including Humm’s acclaimed NoMad Roast Chicken. Humm and Guidara are the dynamic duo behind New York’s Michelin-starred Eleven Madison Park restaurant.

James Beard Award-winning Bar Director Leo Robitschek of Make It Nice oversees the NoMad Restaurant cocktail program as well as that of Nomad Las Vegas’ newly opened NoMad Bar.

The two NoMads will be joined in December by the sixth U.S. location for authentic Italian marketplace Eataly, a 40,000-square-foot culinary destination with a smorgasbord of offerings like food counters, bars, cafes and cooking demonstrations.

Among the new restaurants coming soon to Park MGM is Roy Choi’s Best Friend, which is bringing L.A. food to Las Vegas in late December. A Korean-American chef, Choi is considered one of the founders of the gourmet food truck movement and served as a technical advisor to John Favreau for the food truck-centric film “Chef.”

Best Friend is an original concept for Las Vegas with a “liquor store” entrance full of merch fronting the dining room and bar. Wait, business in the front … party in the back? It’s like a classy twist on the mullet. Diners can expect everything from “Hip hop-to-bibimbop. Kimchi-to-spaghetti. BBQ and late-night food,” according to a playful statement from Choi.

Seafood, sushi and steak restaurant Catch is now open at Aria Resort & Casino. Known to attract A-listers from around the world to its locations in New York and L.A., its opening weekend in Las Vegas was no different. The restaurant celebrated a Hollywood-style Halloween in late October with a star-studded Casamigos costume party featuring the likes of George Clooney, Cindy Crawford,  Kendall Jenner, Joey Fatone, Wolfgang Puck, Marlon Wayans, DJ Steve Aoki and many more.

Guests enter Catch Las Vegas through an 80-foot-long tunnel-like pergola with plenty of Instagram-worthy photo ops along the way like a wrought-iron bench surrounded by a red rose enclave and elaborate flower-sculpted butterfly wings. The contemporary, nature-inspired dining room has a social vibe with an olive tree at the center.

Catch’s menu features globally-inspired cuisine including small shareable plates, signature sushi rolls and larger feasts. Keep your eyes open for a menu of soon-to-be-announced sushi rolls exclusive to Las Vegas.

A hop, skip and a possibly drunken stumble away is The Cosmopolitan of Las Vegas and the traditional authentic Cantonese flavors of Red Plate, which also opened last month. Named as a nod to the Chinese Royal Family, the original and elegant dining concept directly complements The Cosmopolitan’s high-end gaming parlor, The Talon Club, as well as the exclusive The Boulevard Penthouses and private gaming salon, The Reserve. 

Red Plate is led by Chef Yip Cheung, who formerly helmed the kitchen at The Talon Club.

Red Plate’s opening at The Cosmopolitan was preceded by the opening of the elusive and colorful Ghost Donkey. Hidden behind none other than a donkey-marked door, the famed mezcal and tequila bar rounds out the offerings at the property’s new Block 16 Urban Food Hall. The fine fast food collection features an emerging class of acclaimed chefs and first-to-market culinary creations from New Orleans, Oregon and Nashville.

Slightly off the Strip, at Palms Casino Resort, Chef Marc Vetri is opening his Philadelphia-based Vetri Cucina on November 19. The Las Vegas location will be his first expansion in 20 years as part of the resort’s $690 million property-wide renovations. It will offer a gorgeous view of the Strip and valley from the top of the Ivory Tower. Vetri’s new restaurant will remain true to its rustic Italian roots, showcasing regional antipasti, pasta, meat, fish, and dolci offerings. The kitchen will be helmed by Josh Bianchi, who was executive chef at the former Michelin-starred Alizé.

Over on the East side of the Strip, The Palazzo will pay tribute to Hong Kong’s culture and culinary traditions with the first U.S. location of the upscale Mott 32, opening in December. Named for New York’s first Chinese convenience store at 32 Mott Street in Chinatown, Mott 32 is considered a culinary icon in contemporary Chinese cuisine. The Las Vegas location will pay homage to Sin City with design elements like a dining table made out of a vintage Roulette wheel.

Mott 32 will be helmed by two-Michelin star Chef Man-Sing Lee and Chef Alan Ji. The luxurious farm-to-table restaurant will showcase the Cantonese, Szechuan, and Beijing cultures. Along with a variety of signature dishes, including a whole Peking Duck that is specially-sliced to uphold the flavor and crispiness in the skin (and must be ordered 48 hours in advance), Mott 32 will also feature original dishes exclusive to Las Vegas. You may make reservations online or via email.

If you want to grab a bite while you shop, Nordstrom at the Fashion Show opened contemporary Italian eatery Jeannie’s on November 1 in collaboration with renowned Seattle chef Tom Douglas. Jeannie’s replaces Marketplace Cafe (which closed in 2018). A James Beard “Best Restaurateur,” Douglas drew his inspiration for Jeannie’s from the success of his Seattle pizzeria Serious Pie.

Across the way, at Wynn Las Vegas, iconic Italian institution Cipriani will debut its first west coast location at Wynn Plaza on November 9. The oldest concept among the city’s new restaurants, Cipriani dates back through four generations of family to 1931 when Giuseppe Cipriani Sr. opened his quaint Harry’s Bar in Venice, Italy. Guests at Cipriani will be able to order the original Bellini, invented at Harry’s Bar; Not the actual 87-year-old Bellini from Venice, but a freshly made replica, of course.
