Tableside presentations add an extra touch exclusivity to an already fine dining experience. They’re individualized. They’re interactive. They’re like dinner and a show.

Flame-torched bananas? Sure. Liquid nitrogen-infused ice cream? Yep. Premium beef cooked on a hot lava stone? Well, of course! There’s no shortage of tableside theatrics in Las Vegas.

From drinks to dessert, here are six Las Vegas tableside presentations sure to spice up your night (and your social media).

Tableside Toro Tartare

Zuma Las Vegas adds authentic yet innovative Japanese cuisine to the dynamic dining portfolio at The Cosmopolitan of Las Vegas. One of its tantalizing treats is Toro Tartare with caviar and black truffle prepared before your eyes. The server pours Dashi soy over a quail egg yolk and whisks it up tableside. The soy and egg combination is then mixed into the toro tartare, topped with freshly-shaved black truffle and spread on house-made saikyo miso buns. Zuma will also add some heat with freshly grated wasabi, upon request.

Tableside Tuesday Cocktails

Camden Cocktail Lounge is the name. Tableside mixology is the game. The lounge from Clique Hospitality opened earlier this year as part of the ongoing $620 million renovations at Palms Casino Resort. During See You Next Table-Side Tuesdays, every Tuesday at 8 p.m., Master Intoxocologist Eric Hobbie mixes up a flair-filled evening of spirited tableside fun featuring his weekly choice of liquor and an optional food pairing. Tuesday, Sept. 18, mixologists will create a whimsical twist on three classic gin cocktails made tableside with Tanqueray Malacca Gin: Gin & Juice, Gin-Tai, and Gin & Cucumber. Be prepared for smoke, mirrors and other tricks or treats.

Pineapple Carpaccio

It’s probably safe to assume that a restaurant founded by a larger-than-life character like Celebrity Chef Gordon Ramsay and based on a hit TV show, isn’t big on subtlety. Hell’s Kitchen at Caesars Palace not only offers guests a view of its kitchen but its servers have plenty of showmanship. Take the Pineapple Carpaccio, for instance. Made with slices of fresh pineapple, citrus foam, coconut sorbet, passion fruit and coriander, the tropical treat sits atop a glass dish with dry ice in the bottom. Before you can dig in, smoke billows out as a server pours water onto the ice for a steamy spectacle.

Tableside Wagyu

Located on the 16th floor of the Forbes Four-Star M Resort, 16 – A Handcrafted Experience serves craft cocktails, fine wines and small bites with uninterrupted views of the Strip and valley. When it comes to tableside treats, the Grilled Wagyu is sure to add some sizzle to the skyline. The wagyu is served with an assortment of spices and vegetables on the side, then cooked to perfection by you on a heated lava stone slab.

Snack Wagon Pop-Up Cuisine

There’s always something new popping up at Harvest by Roy Ellamar inside the Bellagio Resort & Casino. Every month, the snack wagon culinary series highlights a different Las Vegas guest chef, preparing specialty bites for your table. The chef travels around the lounge with the snack wagon, chatting with guests and offering up a taste of his or her portable dishes. Tonight’s pop-up features Executive Chef Jay Calimlim of Della’s Kitchen at Delano Las Vegas from 5 p.m. to 7 p.m.

Fire and Ice Tableside Banana Split

While Scotch 80 Prime at Palms Casino Resort is the city’s newest steakhouse, its Executive Chef Barry Dakake may go down in history for creating a dessert of elemental proportions, the Fire and Ice Tableside Banana Split. The ice cream is made in a hand-crank mixer fresh at your table from a housemade base and liquid nitrogen. It is then set atop sugar-coated bananas that have been caramelized with a torch. Next, comes the fresh whipped cream and your chance to decorate your own banana split with toppings like cherries, brownie bites, nuts and candy.

Here’s a preview of this sweet tableside treat:
