Michael Mina To Open At Fontainebleau

You’ve heard the rumors. Whispers of a Michael Mina concept by the celebrity chef coming to the Fontainebleau. Well it’s true, and Michael MIna 74 will manifest before the end of the year. Billed as a “high-energy American Bistro-Lounge,” Michael Mina 74 takes over the former Arkadia space, accessible from the main lobby.

The menu is intended to have fun with American cuisine and will feature local shellfish and ceviches, Kobe Beef Shabu Shabu, Alderwood Smoked Salmon, Crispy Fish Tacos and a Kale & Artichoke Caesar Salad as starters. Mains will be similarly mixed up with dishes like Potato-Crusted Pompano, Amish Chicken Tagine with saffron rice, Spiny Lobster Spaghetti, ’Jerk’ Quail with foie gras rice and sugar pumpkin, Roasted Sucking Pig Cubano style, Miso-Glazed Black Cod with ramen noodles, karashi and shitake consommé.

“It’s truly the perfect balance of delicious food, an upbeat sophisticated ambiance, the magic of Miami Beach and this iconic hotel that will deliver a fantastic dining experience for guests,” said chef Michael Mina.

Ambiance will be brought by award-winning design firm AvroKO and will go for a rich, comfortable feel with both urban and Mediterranean touches, which sounds so unique we’re dying to see it. The scene will be high energy and skew more ultra-lounge after a certain hour taking an intimate dinner under dim chandeliers into a late-night celebration.
