High Rollers of Sin City

Delicacies at the Dinner Table

He won the money and she spent it. The daytime debauchery is drawing to a close and now its time to recharge the body in preparation for up-all-night, evening entertainment. Before hitting the late night haute spots, these restaurants are sure to please the palate while putting a little substance in your stomach to soak up beverages that may come courtesy of a hot bartender with a heavy hand.

Cut Las Vegas at The Palazzo

Wolfgang Puck’s contemporary steakhouse at the Beverly Wilshire was such a hit that a Vegas outpost of the fine dining chophouse was the natural progression. Located in The Palazzo, Cut’s décor drips in everything luxe, including custom chandeliers, acid-etched white glass, a distinct wine wall and separate wine tower, and bronze-mirrored walls. But hey, you didn’t come here for the décor, you came to dine, therefore feast like a king on 100 percent Japanese Wagyu beef or Nebraska corn-fed steaks that have been dry-aged for 35 days. The delicate red meats make appearances in signature dishes such as prime sirloin steak tartare with herb aioli mustard; Indian spiced Kobe beef short ribs, slowly cooked for eight hours and served with curried cauliflower puree; or Colorado lamb chops with cucumber-mint raita. As one of Bon Appetit’s top three steakhouses in the country, we would expect nothing short of palate perfection.

Daniel Boulud Brasserie

Lake of Dreams at Wynn Las Vegas delivers a waterfront production that is an experience cherished in the memory banks for years to come. The evening show consistently wows the nightly crowds through lights projecting magical imagery onto a wall of water. Ice and pyrotechnics also come into play, and we recommend taking it all in while enveloped in the aromatic ambiance of Daniel Boulud Brasserie. With the rising star of Chef Wesley Holton guiding the evening’s culinary events, the James Beard award-winning Chef Boulud entrusts his most revered recipes to his capable protégé. Perfect presentation, stellar service, and outstanding entrées have earned this French brasserie top nods from the gourmands and the groupies. The room is styled after a country château, with iron-framed windows that provide a perfect view for the show. Menu favorites include the salmon smoked in house, steak au poivre with a mouthwatering bordelaise sauce, and the signature DB Burger stuffed with braised short ribs, foie gras, and truffles.

Rao’s at Caesars Palace

Straight from the acclaimed New York kitchen (East Harlem to be exact), Executive Chef Carla Pellegrino once again joined forces with Frank Pellegrino Sr., Frank Pellegrino Jr., and Ron Straci to bring homemade Italian fare to the astute palates of Las Vegas. As most chefs would agree, a successful dish first begins with the quality of the ingredients with which it is made, therefore, Rao’s insists on freshness. From the homemade roasted red peppers to the certified San Marzano plum tomatoes direct from Italy, no expense is spared in delivering a mouthwatering menu to discerning diners. Secret recipes have been passed down through the Italian family’s generations for more than 100 years, and the resulting dishes take American gourmands back to the simple pleasures of yesteryear’s culinary delights. Classics like risottos, steak bistecca, and, of course, pasta prepared with just the right firmness grace the menu, along with odes to old-world cuisine like Aunt Anna’s meatballs and Uncle Vincent’s famous lemon sauce. When not oohing and ahhing over the food, Rao’s entertainment keeps the patrons raving, thanks to the signature jukebox and the bocce ball courts.

Krug Champagne Room at Caesars Palace

Experience the glamour and privacy of a Krug Champagne Room at the only one of its kind in the United States. On June 5, the acclaimed Restaurant Guy Savoy in Caesars Palace revealed the Krug Room to guests and continues to offer the height of exclusive luxury dining to its patrons. The AAA Five Diamond Award-rated restaurant’s summer inspired décor is elegantly highlighted with contemporary art and Krug accessories, which are located throughout the space. To complement the ambiance and the extensive Champagne collection, award-winning French Chef Guy Savoy’s summer menu features dishes like colors of caviar, crispy sea bass with delicate spices, and artichoke with black truffle soup to delight bubbly-inclined palates. Like the Krug Rooms in London, Hong Kong, and Tokyo, Las Vegas also offers the entire House of Krug portfolio of Champagnes including Krug Grande Cuvée, Krug Rosé, Krug Vintages from 1985 through 1995, Krug Collection, and Krug Clos du Mesnil. Also in attendance is the intricately designed calfskin Krug “picnic” trunk, which is the stunning result of 700 hours of craftsmanship. The trunk comes complete with gourmet accessories and is customizable to feature an owner’s name or coat of arms.
