An omelette is such a versatile dish, isn’t it? You can dress it up, dress it down … And the ingredient combos are virtually endless. Here are five places in the Valley to visit when you just have to have an omelette that gets it all right.

1 Morning Glory Cafe

Head to one of the Valley's prettiest settings for an outdoor breakfast at The Farm at South Mountain on Morning Glory Cafe's cozy patio. Choose from the South Mountain Omelette, which features vegetables from the nearby Maya's Garden and other local vegetables, as well as Arizona goat cheese and salsa verde for a little extra kick; or the ham and cheese omelette, with slow-baked ham and an ultra-creamy cheddar cheese sauce. Both omelettes are served with the farm's signature home fries and a buttermilk biscuit. Yum, just like mother used to make ... (Only even better. No offense to your mother.)

2 Renegade Canteen

Renegade Canteen, headed up by James Beard Award-winning chef Robert McGrath, has recently added a Sunday brunch to its repertoire of elevated American Western comfort food. And in addition to such faves as Eggs Benedict and buttered waffles with warm maple syrup, there are also a pair of omelettes that are sure to hit the spot. How about honey-cured ham combined with aged cheddar? Or a four-cheese omelette with a red bell pepper catsup? The dishes are served with breakfast potatoes, but other tasty side dishes to choose from include caldo verde, grilled salmon, quiche with duck confit, and pork belly and grits. Try washing it all down with one of Renegade Canteen's RC Champagne Cocktails or a "Canteen Fizzy."

This may certainly be the "proudest" omelette on our list. Proclaimed by FEZ to be "The Best Egg White Omelette You'll Ever Have" (no really, that's what it's called on the menu), this beauty can be ordered during Saturday or Sunday brunch, and it's offered in its traditional, spicy harissa or curry incarnations. The traditional is good. The curry is great. But the spicy harissa is our fave. Think spinach, tomato and provolone cheese wrapped in fluffy egg whites and served with slices of avocado, plus a side salad -- making this meal a great choice for when you want something on the lighter side of breakfast. P.S. The brunch menu also offers a classic omelette and a "FEZ omelette" (herbed goat cheese, peppadews, grilled sliced gyro), but if it comes down to choosing between "The Best Egg White Omelette You'll Ever Have" and something else, it's kind of a no-brainer, right?

4 Matt's Big Breakfast

Owner Matt Pool swears by the ingredients used in the dishes at his restaurant, Matt's Big Breakfast. He and his staff seek out high-quality ingredients, such as cage-free eggs, grain-fed natural Iowa pork and Angus beef, in addition to locally sourced and organic ingredients -- meaning made-to-order omelettes at Matt's Big Breakfast are a real treat. Officially, the menu offers a Cheese Omelet, featuring Wisconsin cheddar, aged provolone, or American folded into three perfect eggs; but that's really just a jumping off point ... So if what you'd really like is a salami omelette with extra mushrooms and broccoli, just ask. Toast and hash browns or home fries are served on the side, and did we mention Matt's Big Breakfast serves breakfast all day? Probably went without saying, but we thought we'd point it out anyway.

5 Tryst Cafe

Tryst Cafe has us charmed, and the same goes for their omelettes. True, it's a bit of a drive for those living in Central Phoenix, but the place is worth the trip. (Plus, Desert Ridge Marketplace is practically right across the street. Make a day of it!) Owned by Sami and Lisa Khnanisho, this little cafe offers a number of choices when it comes to their (gluten-free) omelettes: The Tryst Omelet, with buffalo mozzarella, roasted tomatoes and pesto, and served with sweet potato tots; the Meat Lovers Omelet, with applewood bacon, sausage, ham, white cheddar and served with red potatoes; the Veggie Omelet, with roasted pepper, spinach, mushroom, grilled onions, yellow cheddar and served with roasted red potatoes; and the Cheesy Omelet, with pepperjack, Gruyere cheese, white cheddar and served with roasted red potatoes. That's a different omelet every day of the workweek, plus your fave again on Friday.
