Seth Greenberg Plans to Open Eden Roc at the Renaissance Hotel

Miami’s Eden Roc Renaissance Hotel is the site of the latest spot for dining and fun from restaurateur Seth Greenberg. He is one of the premier figures in today’s hospitality industry and he’s back to doing what he does best.

Greenberg is known for his developments in booming cities like New York, Boston and Miami. His new steakhouse at the renowned Eden Roc Renaissance Hotel in Miami Beach boasts features like oceanfront accommodations as well as impeccable amenities and immaculate service for more than 600 rooms. And you won’t just be eating. You’ll be near some of the premier locations to shop, have fun and experience both history and culture with the Lincoln Road Mall, Bal Harbour Shops, South Beach as well as the Art Deco District.

The new restaurant is set to make its debut this fall with Paula DaSilva serving as executive chef. DaSilva is well-known as the first runner-up in the fifth season of one of television’s most popular shows, Gordon Ramsay’s Hell Kitchen. She was also chef de cuisine of Dean Max’s 3030 Ocean restaurant in Fort Lauderdale.

“I am incredibly honored to be collaborating with … Paula at the prestigious Eden Roc,” said Greenberg. “This is a tremendous project with enormous opportunity to bring a fresh new version of farm-to-table dining to Miami Beach. Incorporating local produce, meats and ingredients with our classic natural elements will result in an infinite array of dishes designed to dazzle diners.”

Experience is everything when you’re trying to start something that you want to be successful, and they seem to have it in this new Miami spot. “After meeting with many possible partners, Seth and Paula emerged as our first choices,” says general manager Greg Cook of Eden Roc Renaissance Miami Beach. “We’re very excited!
