To Umbria with Love: Panevino Ristorante Transports Diners to “The Green Heart of Italy” for May Wine Dinner

Maybe your Memorial Day weekend plans don’t involve a trip to Italy, but you can still sample a taste of the foods and wines of Umbria. Panevino Ristorante plans to highlight the region this Thursday, May 27, during its monthly wine dinner.

Umbria sits in the center of Italy bordered by Tuscany to the west, Marche to the east and Lazio to the south. The region is known just as much for its food and wine as its rolling hills. Italians refer to it as “Il cuor verde d’Italia” — the green heart of Italy.

Executive Chef Mario Andreoni plans a five-course, prix-fixe dinner that highlights two items specially imported from Umbria: Caciotta al Tartufo Nero (black truffle Caciotta cheese), a delicious cheese with a creamy texture and delicate and mild taste that has been aged for approximately 30 days, and Farro (emmer wheat), a hearty ancient grain cultivated predominantly in the Umbria region.

In addition to specially imported items, this month’s dinner will also feature guest speaker Silvio di Silvio, an Italian wine specialist at Kobrand Corp.

Chef Andreoni prepares Filetto di Trota su Insalata di Arugola, a pan-seared, breadcrumb-crusted Idaho rainbow trout on a bed of arugula-drizzled with lemon dressing, for the first course, paired with a 2009 Salviano Orvieto. For the second course, look for Petto di Pollo farcito con Porcini e Caciotta, a pan-seared chicken breast filled with porcini mushrooms and black truffle caciotta cheese on a bed of borlotti beans, paired with 2006 Salviano di Salviano. The third course is a Pappardelle con Tartufo Nero Estivo, homemade wide noodles with black summer truffles in a butter and grana padano cheese sauce served with a 2004 Salviano Turlo. The fourth course includes Salsiccia di Cinghiale selvatico su letto di Farro e Funghi, which is a grilled wild boar sausage on a bed of emmer wheat with tomato and mushroom ragù, served with a 2006 Salviano Solideo. Finally, finish your dinner with Crostata di Farro con Marmellata di Lamponi, an emmer wheat pie with raspberry marmalade and vanilla gelato, paired with a 2006 Castello della Sala Muffato della Sala.

While dining, you can’t help but notice the view of The Strip from the slanted window walls. This special dinner starts at 7 p.m. for $99 per person. Seating is limited and reservations are required.
