But first, a primer, since this drink is still rather new to American palettes. Sake is an alcoholic drink brewed from rice. Even though it’s brewed like beer, it’s not made from a grain. And technically it’s not a rice wine either. Like wine though, sake can be graded. The more the rice is milled, the better the sake will be. The next-higher grades are honjozo and junmai; followed by ginjo and junmai ginjo; and then the highest are daiginjo and junmai daiginjo.
