Peach Street Distillers, Barrel-Aged Cocktails and the Viceroy Snowmass

Trending in the cocktail world right now are barrel-aged drinks. Mixologists premix a beverage and let it sit in wooden barrels to mellow the mix and add sweetness. At the Viceroy Snowmass, the cocktail menu has been updated to reflect this movement, and the tasty drinks are available in Eight K, the Viceroy’s gourmet restaurant.

Try the Aphrodite, which combines Peach Street grappa of gewürztraminer, sweet and dry vermouth, and orange bitters. Peach Street Distillers is a Palisade, Colo.-based microdistillery, producing bourbon, gin, vodka, grappa and brandy. Earlier this year, the company was named “Distiller of the Year” by the American Distilling Institute, further putting Colorado on the map for boutique, award-winning liquor labels. The cool nights and intensely sunny days that occur in the fertile Grand Valley and Western Slope of Colorado have made it a burgeoning market for farms, wineries, orchards and distilleries like Peach Street; partnerships like the one with the Viceroy are helping to give them national recognition.
