Las Vegas imports just about everything people would otherwise cross an ocean for: Michelin-starred chefs, Italian fashion houses, an Eiffel Tower when the mood strikes. Now, for two months only, it’s importing one of Barcelona’s greatest bars. SIPS Drinkery House, crowned The World’s Best Bar in 2023, is taking over VISTA Cocktail Lounge at Caesars Palace from October 31 through December 31, with 16 cocktails, some truly wonderful glassware and drinks created just for Caesars’ 60th anniversary.
Quite the birthday present. Even better, the rest of us get to drink it.
If SIPS has been sitting on your Barcelona wish list, consider this a considerably shorter commute. If you’ve never heard of it, this is your introduction to two bartenders who helped turn Barcelona into a non-negotiable stop on the global cocktail circuit.

The Barcelona Pedigree
Simone Caporale and Marc Álvarez opened SIPS in 2021, and it wasted no time becoming an obsession. By 2023 it sat at No. 1 on The World’s 50 Best Bars. It followed up with No. 3 in both 2024 and 2025, plus back-to-back titles as The Best Bar in Europe. Not bad for a bar that’s barely old enough to have a regular.
At home in Eixample, SIPS tears down the usual wall between guest and bartender. There’s no fortress of bottles here: the room is open, the preparation is part of the show, and the person making your drink is someone you can actually talk to. The drinks work the same way. Familiar flavors get you in the door, technique changes how you experience them, and the presentation (a strange vessel, an aroma, a visual nod to the city) does the rest.
In other words, a natural fit for Las Vegas, a city that likes a little theater with its evening. The difference is that here, the performance fits in your hand.

What to Order
Start with Purple Rain, a modern whiskey sour of bourbon, wild sour honey and beetroot. It’s the smartest way into the menu: a classic you could order in your sleep, nudged just far enough off course to make you pay attention again. (Beetroot in a whiskey sour. Tell me you’re not curious.)
Then comes Mosaic, the drink that wears its hometown on its sleeve. Pisco and aromatic Amazon rainforest woods arrive in a painted glass inspired by Barcelona’s modernist art movement, a little bit of Gaudí’s city carried all the way to the Strip. You’ll know what it is before you take a sip.
And then there’s Krypta, the one that will make the next table lean over and ask, “What is that?” Glenfiddich scotch, London dry gin and clarified apple come in an egg-shaped glass with fresh herbs suspended inside, so every sip arrives with a hit of aroma. Scotch and gin sharing top billing is intriguing enough on its own. The glass is what makes it unforgettable, and yes, it’s functional: the herbs change what reaches your nose before the drink reaches your palate. Take the photo first. Everyone does.

A Little Barcelona on the Strip
For the run of the residency, VISTA’s screens will show the Barcelona skyline and footage from SIPS, with branded pillows and coasters around the lounge. More importantly, select cocktails will be served in the very same glassware used in Barcelona, which matters when the vessel is half the idea, as it is with Mosaic and Krypta.
The 16-drink menu also includes cocktails created specifically for Caesars Palace, so SIPS devotees have something new to chase while first-timers can bounce between the classics and the exclusives.
It runs right through New Year’s Eve, which means there’s no excuse not to fit it in between dinner reservations this holiday season. Barcelona brought the drinks. Caesars brought the address. All you have to do is show up before December 31.
SIPS Drinkery House at VISTA Cocktail Lounge, Caesars Palace (near Amalfi by Bobby Flay and Dominique Ansel Las Vegas), runs October 31–December 31. VISTA is open Monday–Thursday from 2 p.m. to 2 a.m. and Friday–Sunday from 10 a.m. to 2 a.m. Reservations are available but not required.
