I Lost Inches In Just Days: Italy’s Secret Weapon for Weight Loss Is a 1913 Palazzo With a Michelin-Starred Chef
Why a week at Palazzo Fiuggi, a medical wellness retreat near Rome, is worth it — including Heinz Beck’s food and Fiuggi’s healing waters.
Three days at the Italian medical wellness retreat brought comprehensive testing, Heinz Beck’s food, and a convincing argument for giving myself a full week.
I ate like a horse at Palazzo Fiuggi. Two days later, I was several pounds lighter. Ordinarily, when I return from Italy, the souvenir I bring home is a slightly more complicated relationship with the waistband of my jeans. This was an unexpected development.

But the number on the scale was only part of it. Over a three-day stay, I felt better. I was eating well, undergoing comprehensive testing, and spending time somewhere so gorgeous and calming that I wanted to bottle the feeling and take it home. Conveniently, Fiuggi already has a considerable reputation for what comes in a bottle: its mineral water.
My weight change was a personal observation over two days, rather than a measurement of fat lost; the scale alone cannot distinguish changes in fluid and other short-term factors. What stayed with me was the combination of feeling satisfied, feeling lighter, and having time devoted to understanding my health.
Three days gave me a taste of what Palazzo Fiuggi does. They also made me think that, for someone arriving with health concerns they want to investigate properly, a week here could be a game changer. I wanted more time for the testing, the conversations, and the opportunity to act on what I learned. The very good food certainly helped my willingness to extend.

An Italian Palazzo Makes a Persuasive Setting for Taking Care of Yourself
Set within private parkland in Lazio, roughly 70 kilometers from Rome, Palazzo Fiuggi overlooks a town whose mineral waters have attracted visitors for centuries. The property sits approximately 700 meters above sea level, surrounded by greenery, with views toward Fiuggi’s historic center. Rome feels within reach; its pace feels considerably farther away.
Before its current incarnation, this was Palazzo della Fonte, a grand hotel that opened in 1913. King Vittorio Emanuele III and the Italian royal family stayed the following year. Its history includes visits from figures such as Pablo Picasso, Luigi Pirandello, and Guglielmo Marconi, followed in later decades by Ingrid Bergman and Roberto Rossellini.
The present-day retreat opened in 2021, following a transformation led by founder Lorenzo Giannuzzi. Its restoration preserved original parquet, marble, and handcrafted Murano glass chandeliers, introducing contemporary furnishings and extensive wellness facilities around them. It still has the proportions and personality of a grand Italian hotel.

The 102 rooms and suites range from 32 to 135 square meters, with views across the park or toward the old town. Pale interiors are accented with shades of blue, ochre, and Pompeian red. The larger accommodation options include Imperial and Royal suites; for an entirely different scale of privacy, Villa Luisa spans four levels and has its own spa, gym, gardens, and the option of a private chef and butler service.
For me, the beauty was central to the appeal. I wanted to feel better physically, but I also appreciated being somewhere that made the process feel pleasurable. The views, the interiors, and the calm all contributed to my experience. I cannot assign a clinical value to a chandelier. I can say that I was very happy to look at one between appointments.

Heinz Beck Gives the Food Serious Credibility
Let’s spend some time on the food, because it deserves considerably more than a passing reference to a “healthy menu.”
Palazzo Fiuggi’s culinary philosophy comes from Heinz Beck, the celebrated chef of Rome’s La Pergola, whom the press kit identifies as a three-Michelin-starred chef. He developed the Palazzo Fiuggi Food Line in collaboration with the medical team, bringing the technique and attention of fine dining to personalized nutrition.
That collaboration is fundamental. The food is meant to support the guest’s individual program, rather than exist as a separate indulgence at the end of a day of treatments. The property describes an approach that combines controlled calorie intake, carefully selected nutrients, herbs, and cooking techniques with a movement plan. Its stated aim includes supporting fat loss while preserving muscle mass, where weight management is the goal.
On paper, that could sound rather earnest. My experience was much more enjoyable: I ate generously and felt satisfied. I looked forward to meals. As someone whose work often revolves around restaurants, bars, and the pleasure of eating and drinking, that mattered to me enormously.
Beck’s role gives the kitchen an especially interesting brief. Flavor, texture, presentation, and nutritional purpose all have to earn their place. A meal still needs to be desirable when it arrives at the table, regardless of how thoughtfully its nutritional profile has been calculated. My appetite remained very much in attendance.
The property also offers an à la carte dining option, giving guests greater flexibility within its food philosophy. The distinction matters when choosing a stay: a personalized medical nutrition plan and a more flexible leisure dining experience serve different needs. Your menu depends on the approach arranged with the team.
What impressed me was how naturally food became part of taking care of myself. I felt well fed throughout my short stay. If you want to persuade me that a different approach to eating might make me feel better, having Heinz Beck involved is an excellent opening move.

What the Short Wellness Break Entails
My visit lasted three days. For readers planning a comparable introduction, Palazzo Fiuggi’s published Wellness Break is described as a three- or four-night stay. The press kit outlines its components rather than providing a fixed, appointment-by-appointment timetable, and my own testing should not be taken as a list of everything automatically included for every guest.
The structure brings together medical guidance, personalized nutrition, and a selection of signature spa therapies. Here is what those components actually involve.

Medical Guidance and a Personalized Food Plan
The short break includes medical guidance and an individual nutrition plan. This is the framework around which the wellness experience is organized. The exact assessments should be established with the team, particularly if you want to investigate a specific concern or arrange testing beyond the core package.
I underwent comprehensive testing during my stay, and that was one of its most valuable elements for me. Having time set aside to pay attention to my health felt significant. A short visit also made clear how useful additional days could be for discussing findings and understanding the next steps.

Welcome Hammam
The Welcome Hammam introduces the spa experience. The menu describes the Palazzo Fiuggi Ritual Hammam as a 15-minute treatment involving a scrub and saponage—a soaping ritual—to prepare the skin for subsequent treatments. It is a relatively brief opening ritual within a much wider program.

Three-Step Hydrotherapy
One of Palazzo Fiuggi’s signature experiences, this 50-minute ritual moves through three distinct stages. First comes a mineral hydrotherapy bath. Next is a fango mud wrap on a floating table, introducing warmth and a feeling of supported weightlessness. The treatment finishes with a Scottish shower, alternating hot and cold water.
Those details help explain why hydrotherapy is such a prominent part of the property’s identity. The experience uses temperature, immersion, and touch in a sequence, with the surrounding facilities allowing water to remain part of the stay beyond a single appointment.
Psammo Therapy
Psammo Therapy uses warmed quartz sand to create a cocooning treatment. The spa menu describes a 30-minute version that incorporates a short, gentle massage and Tibetan singing bowls. A separate, longer Psammo Signature Experience is also available on the menu, so it is worth distinguishing the specific treatment in your itinerary from the extended option.
Bodywork Deep Detox
The Wellness Break also names Bodywork Deep Detox among its signature therapies. The menu’s Body Work Detox treatment is a 50-minute session using drainage techniques and acupressure, drawing on the meridian framework of Traditional Chinese Medicine.
This sits within the property’s broader Remedy Body Work System, developed by Maya Skupien. The approach combines manual techniques, breathing, and work on muscular and connective-tissue tension. “Detox” is the property’s terminology for these offerings; it should not be read as evidence that a massage removes specific toxins or explains a change on the scale.
Kobido Facial Ritual
The short-break description includes a Kobido Ritual. The spa menu lists a 50-minute Lifting Face Kobido treatment, using facial massage techniques aimed at the cheekbones, jawline, and facial muscles. It brings an aesthetic element into a stay otherwise heavily focused on how the body feels and functions.
That combination appealed to me. I wanted the reassurance and attention of the medical side, and I also appreciated the idea of leaving looking a little more rested.
The Four-Night Addition
For the four-night Wellness Break, the press kit additionally names Spa Wave binaural sound therapy. The menu describes a 30-minute experience combining audio frequencies and vibration, intended to encourage relaxation. It is a separate element of the longer short break, rather than something the materials promise within every three-night booking.

What Seven Nights Can Entail
A week gives Palazzo Fiuggi more room to develop a program around a guest’s priorities. Importantly, there is more than one route. The Regenerate program is explicitly offered from seven nights, while the wider medical collection addresses longevity, diagnostic screening, weight management, and other specific concerns through stays of one or multiple weeks.
That distinction is useful: booking seven nights does not automatically mean receiving every test and treatment in the medical offering. The selected program and individual medical plan determine the experience.
Regenerate: The Restorative Week
Regenerate is the clearest seven-night starting point in the press kit. It includes selected medical evaluations, hydrotherapy, a series of regenerating treatments, and a personalized Heinz Beck nutrition plan. Its emphasis is physical and mental relaxation, with the property positioning it as either a standalone retreat or an introduction to a more intensive program.
For someone who wants the structure of a wellness stay while allowing room to decompress, that is an appealing proposition. It also supplies what my visit lacked: time. Time to settle into the surroundings, become familiar with the routine, and give the experience more than a few days in a crowded calendar.
Longevity: A Broader Medical Focus
The flagship Longevity program brings together metabolic assessments, cardiovascular screening, and genetic testing within an individualized plan. The press kit specifically names longevity blood tests, genetic and microbiota testing, carotid Doppler ultrasound, sleep assessment using sleep bands, and specialized intravenous infusions.
Hydrotherapy, thalassotherapy, and therapeutic movement accompany that medical component. The appeal is the breadth of attention across different aspects of health. Individual tests and interventions still need to be appropriate to the guest; this is a program to discuss with the medical team rather than a universal checklist everyone needs.
Longevity Full Body Check: For Guests Prioritizing Testing
For someone whose main goal is understanding their health, the Longevity Full Body Check places greater emphasis on diagnostics. The listed assessments include DEXA body-composition scanning, genetic and microbiota analysis, carotid Doppler ultrasound, vitamin and mineral screening, thyroid and parathyroid ultrasound, cycle ergometer testing, and spirometry to assess lung function.
Movement assessments, fitness planning, and personalized wellness treatments accompany the testing. Of the options described, this is particularly relevant to the feeling I had during my own stay: that having dedicated time and access to medical attention could be the most valuable luxury of all.
Optimal Weight: A Dedicated Weight-Management Approach
Optimal Weight combines metabolic analysis, body-composition assessments, cardiovascular screening, customized fitness, and a Heinz Beck nutrition plan. The property also lists intravenous infusions and colon hydrotherapy within its description, with the individual treatment plan requiring medical discussion.
The program is presented as an investigation of metabolic factors and a framework for sustainable weight management. My own two-day change on the scale is a separate personal experience, rather than proof of this program’s long-term outcomes. What I can say is that eating well and feeling satisfied made the overall approach much more appealing to me.
Deep Detox: A More Intensive Offering
Deep Detox combines diagnostic testing, metabolic blood analysis, a targeted food plan, movement assessments, hydrotherapy, and far-infrared treatments. The press kit also lists cryotherapy, ozone therapy, colon hydrotherapy, and specialized infusions among its offerings.
Those interventions are a reason to have a substantive conversation with the medical team about the purpose, evidence, and suitability of the proposed plan. They are not interchangeable with a relaxing spa treatment, and a guest’s health history should shape what is arranged.
Programs for Women’s and Men’s Health
Femina Longevity focuses on women’s health. Its published components include a gynecological consultation, pelvic and breast ultrasound, Pap and HPV-DNA testing, and a hormonal blood panel, alongside supportive treatments. Testing should be tailored to age, history, and clinical need. The property also offers separate menopause-focused add-ons.
Andros Longevity addresses men’s health through andrological and urological consultations, prostate ultrasound, PSA analysis, and metabolic and cardiovascular assessments, accompanied by movement and wellness therapies.
These options illustrate how differently a longer stay can be organized. A guest seeking rest, someone concerned about sleep, and someone investigating a health issue may all arrive at the same palazzo and require quite different itineraries.

The Medical Facilities Are Substantial
The wellness and medical facilities span approximately 6,000 square meters, with distinct wellness, medical, and beauty areas. The medical spa has 12 medical rooms, while the wider facilities include dedicated treatment spaces, yoga and Pilates facilities, and extensive water experiences.
Beyond the core programs, the diagnostic offering includes bioelectrical impedance analysis and Styku 3D body scanning, ECG testing, exercise testing, ultrasound, and spirometry. Some assessments are part of particular programs; others can be arranged separately. That flexibility is valuable, provided guests understand what their own booking includes.
The add-on collection is equally specific. Sleep Health Check-Up lists neurological consultation, polysomnography, and EEG; separate sleep and stress packages include relaxation therapies and other support. Other options address joint mobility, personal training, food-sensitivity management, and gut-related concerns. A post-stay follow-up plan is also part of the property’s stated approach to its medical wellness journeys.
For me, the testing gave the stay substance beyond the immediate pleasure of being there. The setting was beautiful, but I also valued the opportunity to ask questions about my body and devote some proper attention to it.

Movement in a Former Ballroom
The 400-square-meter Workout Movement Lab occupies the former ballroom. It is a wonderfully Italian place to put a gym: a room once devoted to one form of movement repurposed for another, with rather more equipment involved.
Alongside Technogym equipment and Reaxing cognitive-training tools, Palazzo Fiuggi works with the High-Performance Method, or HPM. Its functional evaluation looks at flexibility, stability, reactivity, and biomechanical efficiency, generating what the property calls a personalized Body ID to inform movement recommendations.
The broader offering includes functional training, aquatic exercise, yoga, Pilates, meditation, and breathing practices. Hiking routes through the surrounding landscape are selected to suit different fitness levels; walking and cycling programs offer further ways to get outside. Tennis and padel courts add to the options.
All of these are available within the wider retreat offering, with participation and inclusion depending on the chosen stay. The range makes it possible to think about movement in terms of how you want to feel and function, as well as how much exercise you want to do.

And Then There Is the Water
Fiuggi’s mineral-water history is woven into the experience. The press kit recounts Michelangelo crediting the water with helping his kidney stones in 1549, and Pope Boniface VIII having it transported to Rome. Those stories explain the town’s longstanding reputation as a place people visit in pursuit of better health.
The retreat incorporates Fiuggi water into its food philosophy and water-based treatments. The spa’s thalassotherapy circuit moves through a magnesium-enriched mineral pool, a dense salt pool, and a cold plunge. A separate one-to-one Thalasso Bodywork session uses buoyancy to allow a therapist to support, stretch, and move the body in warm water.
The roughly 700-square-meter Roman Thermae adds saunas, hammams, cold-water experiences, and relaxation areas with views toward the old town. It makes bathing feel like an activity worth leaving time for, rather than something squeezed in before dinner.
Did the water contribute to how much better I felt? I cannot isolate it from the food, the care, the slower pace, or the surroundings. But being in a beautiful town with such a long tradition of people coming for its waters gave the stay a sense of place. Wellness felt connected to Fiuggi itself.
Why I Would Give It the Full Week
My three days were enough to notice a difference. I ate exceptionally well, saw the scale move, underwent comprehensive testing, and felt calmer in surroundings that made taking care of myself feel like something I wanted to do.
The weeklong experience interested me because it would allow more time to explore the medical side and make sense of the findings. For someone arriving with health concerns, that could be especially meaningful. The useful next step is choosing the right program with the team, so the stay serves the questions you actually want answered.
I also wanted more time simply to enjoy being there. I liked the beauty, the calm, and the way good food remained a pleasure throughout. Feeling better physically and enjoying my surroundings were closely connected in my experience.
I went for three days. Next time, I would clear the week—and arrive hungry.
