Crafted at Shiraiwa Kura in Toyama, Japan, IWA 5 is Geoffroy’s bold reimagining of sake, blending his Champagne-making mastery with Japan’s centuries-old brewing traditions. The Junmai Daiginjo sake is made from an assemblage of rice varietals and five distinct yeast strains, offering a complex, elegant profile designed to pair seamlessly with global cuisines.

The evening at Maison MURA, known for its curated sake and wine collections alongside refined Japanese cuisine, underscored how IWA 5 is redefining sake for the world’s most discerning palates. Pairing oysters and charcuterie with IWA 5, guests delighted in the tasting notes of the sake featuring a velvety profile of minerality, salinity, and fruit notes of crisp green apple and white peach.
