On October 1, Casadonna opens its doors to Carolina Territorios, the traveling culinary program of Carolina Restaurante, one of Medellín’s most culturally resonant restaurants, for a single-night dining experience that brings Colombian and coastal Italian cuisine into conversation for the first time in Miami.

The premise of Carolina Territorios is worth understanding before the evening begins. Rather than recreating Carolina in a new city, each edition of Territorios brings Carolina’s culinary identity into direct dialogue with the cuisine and culture of the host restaurant. In Miami, that host is Casadonna, the Groot Hospitality and Tao Group Hospitality coastal Italian restaurant designed by Ken Fulk inside the historic Mediterranean revival building that once housed Miami’s Women’s Club in Edgewater. The evening unfolds through four culinary acts led by Emilio Valencia, Executive Chef of Provenza Medellín and personal chef for Karol G, alongside Chef Lisbeth Mora and Casadonna’s own culinary team. What emerges is not a fusion dinner but a dialogue between two kitchens with specific points of view and enough in common, coastal ingredients, slow techniques, recipes built by hand before they were ever written down, to make the conversation worth having.

Casa Dragones extends the experience through the cocktail program, connecting Mexican craftsmanship with Colombian ingredients and cultural references. The 200 Copas by Casa Dragones, an exceptional Añejo Cristalino from the small-batch tequila house founded by Bertha González Nieves, the first woman recognized as a Maestra Tequilera by the Academia Mexicana de Catadores de Tequila, grounds the beverage program in the same attention to provenance and precision that defines the food.

Carolina opened in Medellín in 2024 on a straightforward conviction: Colombia deserves a bigger table. The kitchen is built on what is passed down rather than taught, shaped by the patience of a slow fire and recipes made by hand long before they were written anywhere. Territorios carries that sense of origin to cities around the world, arriving not to showcase Colombian cuisine in isolation but to let it find its footing in a new room, alongside new collaborators, in front of a new audience.

Casadonna, for its part, is a room that earns its setting. Housed in the same Mediterranean revival building as Miami’s historic Women’s Club, the restaurant takes its name from the Italian phrase for “house of the woman,” a name that speaks as much to its address as to its character. The cuisine draws from the coastal towns of Naples, Taormina, Bari, Positano, and Gaeta, prepared with local and imported ingredients and presented in a contemporary register that is more specific than most Italian restaurants in Miami allow themselves to be.
