New York has no shortage of places to order a good glass of wine. Finding one with a truly exceptional cellar is another story entirely. These are the destinations where collectors, sommeliers and serious wine lovers go when only the world’s best bottles will do—from rare vintages and First Growth Bordeaux to Grand Cru Burgundy and prestige Champagne poured by the glass. Whether you’re celebrating a milestone or simply looking to experience one of the city’s most extraordinary wine programs, these five wine bars have elevated the ritual of drinking wine into an art form—and earned their place among New York’s very best.
Rarities occupies a discreet mezzanine level inside the Lotte New York Palace, and it feels less like a hotel lounge and more like gaining access to a private collector’s cellar. The reservations-only space is one of New York’s most exclusive places to drink, with a cellar of more than 3,000 bottles and an equally extraordinary collection of rare spirits. This is where First Growth Bordeaux, legendary Burgundy, prestige Champagne and iconic Italian wines share the spotlight, with producers like Château Lafite Rothschild, Château Margaux, Krug, Salon, Gaja and Masseto appearing throughout the collection. The lounge occupies the mezzanine of the 1884 Villard Mansion, predating the hotel that now surrounds it by more than a century, and Condé Nast Traveler has called it the world’s most exclusive hotel bar. If you’re celebrating something truly special — or simply want to experience one of the city’s most extraordinary wine programs — there are few places that compare.

The beauty of Aldo Sohm Wine Bar is that it takes the intimidation out of drinking some of the world’s greatest wines. Created by Aldo Sohm, the acclaimed wine director behind Le Bernardin, this elegant Midtown spot is known for giving guests access to bottles that would otherwise remain firmly on collectors’ wish lists. Thanks to one of New York’s most impressive Coravin programs, it’s not unusual to find Grand Cru Burgundy, First Growth Bordeaux and prestige Champagne available by the glass, alongside benchmark Super Tuscans and other blue-chip labels. Sohm, once named Best Sommelier in the World by the Worldwide Sommelier Association, built the room around that same philosophy: serious wine, minus the ceremony. The room is relaxed, the service is impeccable, and every visit feels like an opportunity to taste something unforgettable.
One of New York’s most exciting new openings, Bar Chimera was designed with serious wine lovers in mind. From the team behind COTE and COQODAQ, the Madison Avenue destination pairs soaring architecture and a glamorous atmosphere with a cellar overseen by Master Sommelier Mia Van de Water. The reserve Coravin program is one of the city’s most ambitious, with guests able to explore exceptional bottles — from mature Bordeaux and Grand Cru Burgundy to vintage Champagne — without committing to a full bottle. Bar Chimera is the first standalone bar from Simon Kim’s Gracious Hospitality Group, the team behind COTE, New York’s Michelin-starred Korean steakhouse, a lineage that explains the ambition behind the cellar. It’s sophisticated without feeling exclusive, and is already earning a reputation as one of Manhattan’s premier destinations for collectors and curious drinkers alike.
Wine is the reason people come to Chambers. Under the direction of acclaimed sommelier Pascaline Lepeltier, the Tribeca favorite has quietly built one of New York’s most respected wine cellars, with a list that spans more than 2,000 bottles and a particular strength in Burgundy, Champagne, the Loire Valley and Piedmont. Depending on what’s available, you’ll find producers such as Domaine de la Romanée-Conti, Raveneau, Roumier, Jacques Selosse and Giacomo Conterno alongside remarkable discoveries from smaller estates. The address itself carries history: Chambers occupies the space that housed Racines NY, one of the city’s earliest champions of natural wine, before Lepeltier and her team reopened it under a new name in 2022. The food is excellent, but it plays a supporting role here. This is a place to settle in, trust the sommelier and let the wine lead the evening.
A New York institution with unmistakable Parisian sensibilities, La Compagnie des Vins Surnaturels has spent years earning the trust of collectors, sommeliers and anyone who simply loves great wine. It’s the New York outpost of a Parisian original, run by the Experimental Group, the hospitality company behind a run of celebrated hotels and bars across Paris, London and New York. The list is deep, globally minded and anchored by many of France’s most celebrated producers, particularly in Burgundy, Bordeaux and Champagne, while also shining a light on exceptional bottles from lesser-known regions around the world. It’s polished without ever feeling pretentious, equally suited to ordering an iconic bottle for a celebration or discovering the next producer you’ll be talking about for years. That’s exactly what keeps New Yorkers coming back.
