Alinea’s 20th Anniversary Tour Lands at Bellagio Las Vegas for Limited Residency

Las Vegas’ culinary scene is about to get even more interesting.
For the final stop of its 20th Anniversary Tour, Alinea — the iconic Chicago restaurant helmed by Chef Grant Achatz — is heading to Bellagio Resort & Casino for a limited culinary residency from April 16 through May 31.
And not just anywhere inside the resort.

Achatz and his team will take over Michael Mina, the celebrity chef’s eponymous dining room steps from the famed Bellagio Conservatory & Botanical Gardens, transforming the storied space into an immersive Alinea experience paired with the resort’s signature, world-class hospitality.
Two decades ago, Alinea set out to redefine what fine dining could be. Today, after 14 consecutive years of three Michelin stars, the restaurant continues to evolve — not by replicating itself, but by responding to place.
The anniversary tour has already sold out in Brooklyn, Miami Beach, Beverly Hills, Tokyo, and Big Sky. Las Vegas marks its final chapter.

And it feels intentional.
Achatz has long explored the role of restaurants within culture — how food can create emotion, challenge expectation, and linger long after the last bite. In many ways, Bellagio is a natural stage. The resort has been instrumental in shaping modern American dining and elevating Las Vegas into a serious culinary capital.

Rather than transporting Chicago wholesale, the Bellagio residency will be collaborative. Achatz and his team will work alongside Bellagio chefs, local culinary talent, and regional purveyors to create dishes that honor Alinea’s innovative spirit while celebrating the flavors of the city. Expect the precision and theatricality Alinea is known for — but with a sense of place that makes this run entirely its own.
Achatz calls the tour a “love letter” to the restaurant and hospitality industry — a gesture of gratitude to the chefs, partners, alumni, and guests who helped shape Alinea’s journey.
Las Vegas just happens to be where that letter lands last.
