
Weekend Roundup: Scarpetta Debuts New Summer Menu
Hint: It's a lot less pasta, a lot more greens.
To celebrate the summer season, Scarpetta is introducing an entire new section to their classic, signature menu. ‘Verdure’ will be dedicated solely to vegetable based dishes, featuring 7 bold and vibrant selections inspired by this season’s fresh produce and ingredients.

Each dish on the Verdure section features a star vegetable including rich sunchokes, pattypan squash, purple cauliflower, and radicchio, making each vibrant veggie the focus of the dish. Examples of the inspiring plates available on the Verdue menu include the roasted Cauliflower Romanesco with home-made salmoriglio and bread crumbs, the Roasted Zucchini with pattypan squash and lemon, and the Radicchio with marcona almonds, parmesan and balsamic.

“Today there’s a lot more variety available and more vibrant colors at the markets. People have taken a greater interest and are placing a greater importance on vegetables. They’re not just sides anymore and people are looking to expand their palates beyond the typical steamed and sautéed broccoli/spinach/carrots,” says Executive Chef Jorge of the new menu.
