Haute 100 Update Miami: Chef Michael Schwartz’s Cypress Room Anchoring Swanky Slow Food Dinner At The Kampong

Once again, Michael Schwartz is anchoring Slow Food Miami’s charity dinner, Ark of Taste, which will be held at The Kampong National Tropical Botanical Garden on Tuesday, January 28. The dinner menu will be planned and prepared by Schwartz and his Cypress Room team. The Ark of Taste Benefit Dinner will be a four-course affair with a welcome cocktail by GREY GOOSE taking place in a candle-lit setting amongst the lush tropical gardens, followed by a cocktail with Ryan Goodspeed, The Genuine Hospitality Group’s Beverage Director.

“I’m thrilled to be part of the Ark program for the fifth time,” says Schwartz, “deciding to do the event in January was key so we could embrace our main growing season down here, especially since Borek’s tomatoes are at their peak.” It’s not just tomatoes, the entire dinner will strive to use local ingredients at the peak of their season. Tickets cost $250, and can be purchased here. All the proceeds from the dinner will go towards Slow Food Miami’s Edible Garden Program as well as the Kampong. Ark of Taste focuses on heritage fruits, vegetables and livestock in danger of extinction, many of which Schwartz uses in his restaurants.
