Haute Wine Society and Simon Family Estate Honor Chef Dean Fearing With A Star-Studded Dallas Dinner

On September 4, the culinary and cultural elite of Dallas gathered at Fearing’s Restaurant at The Ritz-Carlton, Dallas, for an extraordinary evening hosted by Haute Wine Society and Simon Family Estate with legendary Chef Dean Fearing.

Often hailed as the “Father of Southwestern Cuisine,” Chef Fearing, alongside Corey Thomson, Executive Pastry Chef at Fearing’s Restaurant and The Ritz-Carlton, Dallas, prepared an exclusive multi-course dinner paired with world-class wines from Simon Family Estate.

The evening began with an elegant amuse-bouche of foie gras torchon with citrus variations, paired with the 2024 Simon Family Estate Tigress Rosé of Grenache. The first course featured scallion ash-cured hamachi tiradito with crab nuggets, BBQ-roasted okra, late summer corn, and aji Amarillo sauce, balanced by the bright minerality of the 2022 Simon Family Estate Golden Ore Sauvignon Blanc.

A second course of dry-aged Rohan duck breast with butternut squash spaetzle, Chinese long beans, and blueberry jus was elevated by both the 2022 Simon Family Estate Double Blessings Peter and the 2022 Simon Family Estate Double Blessings Michael. The third course featured a mesquite-grilled RC Ranch strip steak served with fondant potatoes, spring vegetables, salsa verde, and Bordelaise sauce, complemented by the depth of the 2022 Simon Family Estate Cabernet Sauvignon Napa Valley and the 2022 Simon Family Estate Cabernet Sauvignon Reserve. Dessert was a late-summer plum tart accompanied by crème fraîche cremeux, hazelnut financier, and cinnamon gelato, paired with the 2020 Simon Family Estate Golden Ore Sauvignon Blanc.

The intimate dinner drew an impressive roster of Dallas’ most influential figures across industries, including Jeffrey C. Crowe, Hillary Stout, Pia Kaur, Nick Kuelbs, Dr. Lou DeGironemo and Sarah DeGironemo, Rob Rosenberg, Sam Rosenberg, Percy Knox, April Irene Donelson, Managing Director at Haute Media Group, Vanessa Conlin, one of fewer than sixty Masters of Wine in the United States, Director of Growth and Partnerships at Simon Family Estate, and US Ambassador for Château Ducru-Beaucaillou, Josh Kretchmer, Director of National & Private Client Sales at Simon Family Estate, attended with his wife Colleen Kretchmer, and more.
