Drawing from an extensive experience in culinary innovation and a deep understanding of luxury hospitality, Chef Garcia boasts over two decades of expertise in the industry, previously serving as Executive Chef at Bicyclette Bistro and Manzke Restaurant where he was awarded a Michelin star in 2022 and 2023. He also served as a Sous Chef at The French Laundry, a Three-Michelin-star restaurant in Northern California, working alongside luminary culinary figure Thomas Keller. His extensive global culinary experience spans celebrated restaurants such as Bouchon in Beverly Hills, Boca Restaurant, The Cincinnatian Hotel in Cincinnati, OH, Le Bec Fin in Dole, France, Maison Lameloise in Burgundy, France, and El Encanto in Santa Barbara, CA.

Born in Nice, on the French Riviera, Chef Blondet has been working closely with Alain Ducasse for over a decade. His first role with Chef Ducasse was interestingly at Spoon at Sanderson in London before joining Three-Michelin starred Le Louis XV-Alain Ducasse at l’Hôtel de Paris in Monaco, Alain Ducasse’s iconic restaurant. Before returning to London, Chef Blondet held the position of Sous-Chef at Spoon in Hong Kong, further adding to his international experience and satisfying his curiosity and interest in cuisines of the world. In September 2013, he joined the team at Alain Ducasse at The Dorchester— a three Michelin-starred serene, otherworldly space dedicated to the sheer pleasure of food—as Sous-Chef with Jocelyn Herland and was quickly promoted to Head Chef within two years and then Executive Chef in January 2016. Chef Blondet interprets Alain Ducasse’s cuisine in London in a contemporary and refined way while always keeping with Alain Ducasse’s philosophy – the ingredients are the key elements. To this end, he only uses the freshest and most seasonal produce, strictly sourced for their quality and provenance.
