In a landmark year marking two decades of defining New York City’s Meatpacking District, Gansevoort Meatpacking has completed a four-year, $40 million renovation that solidifies its status as a luxury destination in the heart of Manhattan. The extensive transformation of the iconic hotel includes a top-to-bottom redesign of its guest rooms, unveiling a new rooftop concept, and introducing an exclusive private members club, Seven24 Collective.

Originally opening its doors in 2004, Gansevoort Meatpacking was pivotal in shaping the district’s nightlife and cultural identity. Over the years, it has become a favorite among the fashion elite and Hollywood celebrities, earning a reputation as a premier destination that fuses art, culture, and luxury. The recent renovation is a testament to Gansevoort’s commitment to evolving with its clientele, offering elevated experiences that reflect the district’s continued growth as a hub for high-end fashion and hospitality.
“As the Meatpacking District has evolved over the years, our hotel has elevated its presence from an iconic nightlife destination to a refined, luxurious property,” said Michael Achenbaum, Founder and President of Gansevoort Hotel Group. “This year marks our 20th anniversary, and over the years, we have continued to reimagine our hotel spaces to cater to what our clientele is looking for – including creating a destination rooftop and launching an exclusive membership club.”
At the heart of the renovation is the reimagined Gansevoort Rooftop, now home to Eden, a sophisticated cocktail concept inspired by Achenbaum and Gansevoort Hotel Group Partner Sean Largotta’s travels to coastal Italy. The space seamlessly blends indoor and outdoor elements with a retractable glass roof and sliding walls that extend from the pool deck into an indoor courtyard space enveloped by a lush wraparound terrace. A custom Italian fresco featuring surreal forbidden fruit trees and wisteria motifs adds a touch of the Mediterranean to this urban oasis.Eden’s menu, curated by Gansevoort Meatpacking’s new culinary maestro, Chef Sebastien Chaoui, brings fresh, vibrant flavors to the rooftop. The space is ideal for daytime lunch meetings and intimate evening cocktails, offering a dynamic setting that shifts effortlessly from day to night.
Chef Sebastien Chaoui’s influence extends beyond the rooftop, infusing new life into the menus of the hotel’s European-inspired lobby café, Coffee + Cocktails, and The Chester, the hotel’s ground-floor bistro known for its prime open-air location and sports-friendly atmosphere. To celebrate the hotel’s 20th anniversary, The Chester and Coffee + Cocktails will feature unique pairings with Veuve Clicquot, crafted by Chef Chaoui to elevate the dining experience.Another highlight of the hotel’s culinary offerings is Saishin, New York City’s first rooftop omakase experience. Led by Chef Joseph Liu, Saishin offers bespoke sushi and sashimi tastings alongside an extensive sake menu, providing guests with a truly immersive dining experience against the backdrop of the Empire State Building and One World Trade Center.
Adding to the hotel’s newly elevated identity is the debut of Seven24 Collective, an exclusive private members club designed for today’s globally-minded, visionary tastemakers. Launched in January 2024, the club offers members access to exclusive spaces within the hotel. One is The Study, a versatile space transitioning from a coworking hub daily to a social gathering spot at night. Members also enjoy exclusive access to the revamped rooftop and the new 3,000-square-foot world-class fitness center, featuring health programs led by renowned Medical Director Dr. Jane K. Kim.The club’s offerings are rounded out by DIMES, a new 70s-themed cocktail lounge that embraces the high-energy nostalgia of New York’s iconic Studio 54. With state-of-the-art bowling lanes, a karaoke lounge, commissioned art, and disco ball-lit dance floors, DIMES is a playful nod to the district’s storied nightlife history and a sought-after venue for exclusive private events.
