Michelin-starred chef Christophe Émé made a name for himself as one of the most respected names in the culinary industry when he opened Ortolan in 2005, receiving critical acclaim and a prestigious Michelin star in 2007. Now, Émé is bringing forth a brand-new concept where he fuses fine dining, impeccable French cuisine and a covetable wine selection into one stunning destination as he debuts KASS Wine Bar + Restaurant in Los Angeles.

Located in a prime destination, along the culinary-rich La Brea Avenue in L.A., KASS Wine Bar + Restaurant serves as the perfect dinner destination, where guests will be greeted by a sophisticated yet familial setting that offers only 40 intimate seats for dinner service. The space is clean, sleek and modern yet inviting for guests to enjoy three curated experiences: The Wine Bar, offering cheese and charcuterie boards and fresh oysters with expert wine pairings and crafted beverages; the Dining Room, dressed with plush banquette seating, oakwood tables and dim lighting with views of an open kitchen; and The Outdoor Patio, perfect for beautiful Los Angeles nights, decorated with rattan nest chairs and long tables—the ideal setting for group dining.

And the authentic French menu is indicative of Chef Émé’s inimitable culinary craft, utilizing fresh, local ingredients for his innovative dishes with artful presentation. The offerings range from refreshing, light appetizers to rich, savory dishes such as the Salad of Baby Beets to start, atop black lentils and aged Comté, Tuna Sashimi or a warm, Grilled Octopus atop baby fennel, Yukon potato and red bell pepper coulis. For mains, highlights include decadent plates like the expertly prepared Oxtail Parmentier, balanced with bone marrow and Burgundy truffles; Tortellini with creamy ricotta and green asparagus coulis; or a tender Chicken Suprème en Croute D’Argile—cooked in clay, accompanied with wild mushroom sauce and green asparagus.

Chef Émé and his team tapped wine consultant Taylor Parsons of Whole Cluster Consulting to curate the KASS Wine List. The unparalleled list boasts 70-percent French wines, with a special emphasis on Émé’s home region in Loire Valley, paying homage to his roots. The remaining 30 percent stems from France, Europe and California, showcasing the best of each region. The extensive wine list was curated to bring out the rich flavors of the cuisine, often paired with sparkling selections to start, light whites to follow and deep reds to round out the rich flavors of the entrée selections. There is also a careful selection of curated dessert wines to finalize the meal.
