Sublime Chocolate Brings Bean to Bar to Dallas

Chocolate can, quite possibly, cure any emotional turmoil that may be going on in your life from breakups to  a serious stock market drop. It’s one of those products that you should carry in your purse or stash in your desk drawer with the good scotch “just in case”. Sublime Chocolate is high on our list of items that we’d want if we were ever marooned on a desert island with no cell phone service. These chocolates are smooth and sinfully creamy with an explosion of flavor in each nibble.

While they have some amazing milk chocolate concoctions, made from either Valrhona or Belcolade couverture (couverture is a high quality chocolate with 32 to 39 percent cocoa butter that is used to make premium chocolate) their pièce de résistance is their dark chocolate creations. These craft chocolates are created in house directly from the cocoa bean!

Sublime is presently the only chocolatier in Dallas to do this.

Photo Credit: Sublime ChocolateThe beans grow on trees located in regions within 20 degrees of the equator. They are harvested from pods then fermented and dried. These dried beans are shipped to Sublime Chocolate where they are carefully checked and sorted. Once that is done the beans are roasted at the proper temperature to bring out the flavor profile that the chocolatier is looking for. Different roasting temperatures bring out different characteristics in the chocolate so this is an exact science.

Then the beans are cooled and the husks are cracked and discarded. What is left is the cocoa nibs that are then ground into cocoa liquor. The liquor does not contain alcohol, by the way.  Once this is done the cocoa begins a long and arduous process that will ensure that it becomes rich, dark, flavorful chocolate. Just the fact that they make their own chocolate is enough to make it worth the drive to Allen but there is so much more to Sublime Chocolate than their chocolate.

Photo Credit: Sublime ChocolateIf you’ve never had a Mocha here then you’ve never really tasted a Mocha. This is rich, creamy, and perfect. Sipping chocolate is also a possibility of you want that. There are items that come and go according to season and whim but if you get the chance to try the salted caramel ice cream be sure to do so. Maple bacon toffee is another item on the “don’t miss” list.

The service is friendly and fun.  When you walk in you are surrounded by the best aromas of your life. If you let them know it’s your first time in the shop you may get samples of the sipping chocolate and a little extra help in choosing something you’ll love. There is a small seating area, too — just right for a quick afternoon getaway with someone special.
