The suburbanites rejoice when new and noteworthy restaurants open outside of Chicago proper. Prasino is the newest suburban hotspot making headlines for being green and delicious. With a slogan of “Eat Green Live Well,” this cafe incorporates eco-friendly cooking, design and decor into all aspects of Greek chic.
Located just 13 miles west of Chicago in LaGrange, Prasino emphasizes seasonal, local, and organic food prepared in a kitchen designed to reduce energy and water use. They recycle, use eco-friendly cleaning products and care where the food came from. Light fixtures are crafted from recycled wine bottles and cardboard boxes. Tabletops incorporate wood rescued from the demolition of Sportsman’s Park Race Track and floors are reclaimed oak planks salvaged from a barn.
Looking to be a LEEDer and example to others, the family’s appreciation for organic agriculture and artisanal food stems from the experience of growing their own food in Greece as well as making cheese, yogurt, olive oil and wine. Peggy Maglaris Kopley, General Manager, still continues the traditions passed down from her grandparents of growing tomatoes and homemade making yogurt. Even the honey is homegrown, harvested on the family’s prairie farm in Elburn. Executive Chef Scott Halverson cleverly works these into menu staples like Honey Walnut Waffles and the Niman Ranch skirt steak salad with honey mustard dressing.
Located near train and bus lines, you won’t have to increase your carbon footprint escaping the urban mecca.
