Estiatorio Milos, the famed Greek seafood destination born in Montreal and now spanning the globe, brought its signature elegance to its newest location in West Palm Beach, providing the ideal canvas. Known for its market-fresh Mediterranean ethos and understated luxury, the restaurant enveloped guests in an atmosphere that felt both intimate and effortlessly grand. Adding to the visual splendor, lush floral arrangements by Matty’s Flower Design graced the tables, their blooms soft and architectural in equal measure — a fitting complement to the evening’s editorial sensibility

Guests arrived to a welcome that set the register for the night: flutes of champagne, crisp white, and rich red wine extended in greeting, paired with a selection of light bites including golden zucchini chips with cool tzatziki — each one a quiet promise of what lay ahead.

The culinary journey that followed was a love letter to the Aegean. A refined first course of salmon sashimi gave way to the convivial second course: The Greek Spreads — a lavish spread of taramosalata, tzatziki, and htipiti, served alongside raw vegetables and grilled pita, accompanied by a vibrant tomato salad of vine-ripened tomatoes, cucumbers, olives, onions, and peppers finished with barrel-aged Greek feta and extra virgin olive oil. The third course arrived in the form of pristine grilled lavraki, the prized Mediterranean sea bass, dressed simply with Santorini capers, olive oil, and a bright lemon dressing — a dish that speaks the language of the sea with quiet authority. For those drawn to the land, a showstopping Filet Mignon — sourced from Brandt Farms California Prime Beef — offered rich indulgence, elegantly grounded with horta and Greek fried potatoes. The evening concluded on a celebratory note with an assortment of Greek desserts and seasonal fruits, a sweet, unhurried close to a meal that honored both tradition and artistry.
