A slew of hot new F&B destinations have cropped up in Sin City in the past few months, most notably, offerings from Dave Grutman’s Groot Hospitality like LIV, Papi Steak, and Komodo, as well as restaurants location at the Fertitta brothers’ Durango Casino such as Wax Rabbit and Mijo from Clique Hospitality and, off-Strip, Fine Company from chef Roy Ellmar. But what are we looking forward to the most this year? Take a look at our projected hot spots below!
Orla by Michael Mina at Mandalay Bay
Celebrated chef, restaurateur and James Beard Award-winner Michael Mina is set to introduce Orla to Las Vegas this month at Mandalay Bay Resort and Casino. A restaurant that blends the flavors of the Mediterranean and Greece with the bold, aromatic spices of the Middle East, the concept will be the first of its kind for the celebrated chef. Orla, meaning “golden princess” in Greek, will transport guests to a realm where ancient traditions harmoniously merge with contemporary culinary innovation. Drawing influences from Europe, North Africa, Western Asia, and nods to Chef Mina’s Egyptian heritage, the seafood-focused experience will allow guests to explore the culinary wonders of these distinct yet complementary regions.
Brasserie B by Bobby Flay at Caesars Palace
Award-winning chef Bobby Flay is bringing French-inspired favorites to his new restaurant inside Caesars Palace this month. Flay will be putting his signature twists on traditional frites, unique raw bar selections, a variety of starters and entrees, and desserts. Guests can also enjoy a beverage program featuring classic brasserie cocktails and martinis, French-focused wines by the glass, as well as draft beer, bottled beer, and cider.
Signature menu items include a variety of grilled proteins served with house-made French fries. The Lobster avec Frites features lobster with roasted garlic and lemon butter, and the Ribeye Piquant avec Frites includes steak with spicy and sweet glaze and chile butter. The lunch and brunch menu at Brasserie B showcases Flay’s take on popular dishes such as Eggs Royale, a variation of eggs benedict with smoked salmon and lemon chive hollandaise.
Designed by Olivia Jane Design, the restaurant transports guests from the heart of the Las Vegas Strip to a timeless brasserie in Paris. From the casino floor, guests are drawn to Brasserie B’s entrance by a neon sign curved along an exaggerated cornice and the warm interior lighting. The façade is reminiscent of a Parisian storefront with a rich, burgundy plaster.
Brasserie B features an L-shaped, 20-seat bar with weathered marble, fluted wood and zinc accents. The lounge flows into the main dining space, which includes a showstopping raw bar with a lit canopy that spills over the tables below. The intimate, 175-seat dining room features blown glass chandeliers, cane-backed cafe chairs and handmade subway tile. Burgundy banquettes line each of the spaces, and oversized mirrors clad the walls, amplifying the bustling energy that fills the room. A set of folding bistro-style doors bisect the space to create a private dining room with an abstract mural ceiling and illuminated wine displays.
Gordon Ramsay Burger at the Flamingo Las Vegas

Gordon Ramsay’s path to Sin City domination continues this summer with his seventh Las Vegas restaurant and second in his Gordon Ramsay Burger concept franchise. His seventh eatery, set to open this summer, will continue to push the traditional burger, fries, and milkshake combination to the limit. Guests can expect some of their favorites on the menu at the Flamingo location, such as the Hell’s Kitchen Burger, Farmhouse Burger and Hellfire Chicken Wings. To achieve a complex flavor, all burgers are cooked over an open flame fueled by hardwoods. Sides include Just Fries with house ketchup and chipotle ketchup, Truffle Parmesan Fries with truffle aioli and house ketchup, and Sweet Potato Fries with vanilla powdered sugar and honey jalapeño aioli. Those with a sweet tooth can choose from a variety of milkshakes.
The 8,000-square-foot space was designed by DEZMOTIF Studios and features a large exhibition kitchen, island-style bar as the restaurant’s social hub, expansive storefront windows, multiple dining zones, a nod to Brittania with Union Jack accents and dynamic flame displays throughout. Casual and inviting, the main dining room space has a warm and comfortable feel and offers views of the exhibition kitchen. The spectacular, open-air patio overlooks the bustling Las Vegas Strip and is anchored by a 25-foot-tall LED column showcasing Gordon Ramsay Burger imagery underneath the famous Flamingo neon. Gordon Ramsay Burger at Flamingo Las Vegas will occupy the former Bird Bar space along Las Vegas Boulevard.

Michelin starred chef and philanthropist José Andrés is opening not one but two new restaurants in Las Vegas, adding to his portfolio of eateries on the Strip, which include Jaleo and é by José Andrés at the Cosmopolitan and Bazaar Meat at The Sahara. Sometime this year, Andrés will open a new location of his renowned Mediterranean restaurant Zaytinya at the Forum Shops at Caesars Palace and a to-be-announced restaurant at the Shops at Crystals. Chyna Club: From the creative mind of Hakkasan and Wagamama founder Alan Yau comes Chyna Club, serving eclectic Chinese cuisine. Set within a cozy, clubby atmosphere, Chyna Club will take guests on a journey for the senses in a setting that is designed to inspire and wonder.
Cantina Contramar: Cantina Contramar unites for the first time in the United States three of the most recognized and celebrated women in the Mexican culinary and creative communities: Chef Gabriela Cámara, award-winning architect Frida Escobedo, and Tequila Casa Dragones founder and the first maestra tequilera, Bertha González Nieves. Embodying Chef Cámara’s 25 years of delivering unparalleled food, beverage, and atmosphere to local and international guests alike, Cantina Contramar’s menu will offer Cámara’s signature seafood dishes, where excellence is found in simplicity, alongside new items which showcase the wide range and quality of Mexican cuisines and beverages. Cantina Contramar will include a Casa Dragones Tasting Room within the restaurant. Across every moment, bite, and sip, guests will enjoy an authentic Mexican experience and familiar service culture that makes each meal a celebration.
Casa Dragones Tasting Room: Tequila Casa Dragones, The World’s No. 1 Sipping Tequila, brings its exclusive Tasting Room from San Miguel de Allende to the U.S. for the first time, offering immersive tastings and experiences of the ultra-premium, small batch sipping tequilas, alongside bites from the famed Cantina Contramar.
Ito: This refined omakase restaurant, led by chefs Masa Ito and Kevin Kim, will offer an inventive interpretation of traditional sushi in an awe-inspiring setting on the 63rd floor of Fontainebleau Las Vegas. The restaurant will feature 12 seats and sweeping views of the Strip and surrounding city. Ito’s Las Vegas outpost will mark the second location, preceded by the New York City location that opened in 2022 in partnership with VCR Group.
La Côte: Breezy and upscale, evoking the posh resorts of the French Riviera, La Côte will be a beautiful evolution of its original Fontainebleau Miami Beach location. Opening Spring 2024 on the Fontainebleau Las Vegas pool deck, La Côte will boast a vibrant, international menu with hints of Mediterranean flavors. The beverage program will reflect the sunny and fresh al fresco atmosphere, featuring a selection of fine wines with a focus on Rosé and French favorites, refreshing cocktails, and mocktails.
