Baccarat Hotel New York Unveils $1,500 Ice Cream Dessert

Baccarat Hotel New York has added a very special dessert to the menu for a limited time only: the Bear Extraordinaire Ice Cream Dessert. Available now through Labor Day, guests can order the dessert in the Grand Salon at Baccarat Hotel New York, daily from 11 AM to 11 PM.

So what goes into making this delectable treat? House-made vanilla bean ice cream, covered in a white chocolate shell hand-painted with colored cocoa butter, sits atop black truffle crumble made with 64 % Manjari dark chocolate and Valrhona Gold cocoa nibs. Hibiscus champagne sauce envelops the colorful shell, with citrus meringue and fondant butterflies dispersed among angel hair sugar strands. Edible gold and silver leafing adds sparkling accents.
The magical setting and enchanting forest surrounding the Baccarat factory serves as inspiration for this ice cream dessert. Vibrant colors such as red, green and amber are featured in many colorful pieces, combined with the elegance of gold and silver accents.

The bear in clear crystal is presented in a bright, playful way with this version featuring a toffee-colored porcelain base with a clear crystal face. The porcelain base is decorated with a honeycomb motif while the crystal upper half is shaped with flat cuts which morph into tiny diamond cuts on the bear’s face. The figurine is individually numbered and signed by designer Jaime Hayon.
It’s up to you if you want to take the Zoo Bear vessel home with you, but that’s when the dessert will go from $300 to $1,500.
