
Week in Review: Zuma Opens at Cosmopolitan in Las Vegas
A new Japanese izakaya is now open at the Cosmopolitan of Las Vegas. Sushi, dishes from a robata grill and more come out of the kitchen at Zuma, the London-based brand’s 11th location worldwide with dishes from chef Rainer Becker.

Guests can share dishes, an izakaya staple, such as a sea bass sashimi with yuzu, truffle and salmon roe; blanched baby spinach with creamy sesame dressing; and baby chicken that is oven roasted with barley miso on cedar wood. Over at the sushi counter come dishes such as wagyu beef with ginger and caviar; dynamite spider roll with soft shell crab, chili and wasabi tobiko mayo; and spicy yellowtail roll with serrano pepper, avocado and wasabi mayo. The robata grill features spicy beef tenderloin with sesame, red chili and sweet soy; sake-glazed chicken wings; and the 28-ounce wagyu tomahawk steak with fresh truffle.
Noriyoshi Muramatsu of Tokyo-based Studio Glitt designed the 9,000-square-foot space with elements of wood, rusted iron, stone and glass. Nnatural stone from Chiang Mai, Thailand, grand tree trunks and a patchwork wall in the lounge are just some of the elements guests can find.
