Haute Spot: The Longest Lines in Vegas Are Found at Eggslut

A walk through Cosmopolitan of Las Vegas reveals a never-ending line to one of the hottest new restaurants in town. Eggslut made its first foray outside of Los Angeles to serve breakfast sandwiches, especially to the crowds before and after a night at Marquee nightclub.
Every dish features eggs, including the signature Bacon, Egg & Cheese Sandwich, made with hardwood smoked bacon, an over medium egg, cheddar cheese and chipotle ketchup, served in a warm brioche bun; and the Slut, a coddled egg on top of smooth potato purée, cooked in a glass jar topped with gray salt and chives, served with slices of baguette.
Other options include the Gaucho Sandwich with seared wagyu tri-tip steak, chimichurri, red onions and seasoned arugula topped with an over medium egg in a warm brioche bun, a take on a classic steak and eggs.
Chef Alvin Cailan created Eggslut back in 2011, bringing his twist on breakfast sandwich favorites. In 2014, Eggslut’s food hall home, Grand Central Market, was named in Bon Appétit’s list of best new restaurants in America.
Eggslut is located on the second level of the Eastside Tower and is open seven days a week: Monday, Wednesday through Friday: 7 a.m. to 7 p.m., and Tuesday, Saturday, Sunday from midnight to 7 p.m. to satisfy late-night cravings for guests.
But do expect to wait in line.
