45 Park Lane Announces New Sake Offering
The Dorchester Collection’s contemporary Mayfair hotel, 45 Park Lane, is offering guests a new and unique sake experience ‘Shini-Tai’ at both BAR 45 and CUT – 45 Park Lane’s modern American steak restaurant.
The new sake offering follows 45 Park Lane head sommelier Vanessa Cinti’s recent qualification as a sake sommelier, a certification recognised across the globe awarded by The Sake Sommelier Association. The name ‘Shini-Tai’ is a Sumo term given to the losing wrestler, deemed to have no chance of winning due to the superior sumo of his opponent.
Bar 45 will offer guests a ‘Sake Flight’ of three sake flavours from small producers, chosen for their quality, flavour and array of style: Amabuki Marigold brewed with yeast from the blossoms of marigold following a traditional Yamahai method, Kirin Vintage 2013, vintage sake with a rich sherry like taste and Masuizumi Junmai Daiginjo a special sake aged in barrels of Domaine Ramonet (renowned Burgundy producer) will all be served at a chilled temperature. New Rough CUTs by pastry chef Niamh Larkin will be added to the BAR 45 menu to compliment the sake.
Guests will also have the option to choose from a selection of exclusive sakes available by the bottle at both BAR 45 and CUT at 45 Park Lane, allowing Cinti to showcase the spirits remarkable versatility when paired alongside executive chef David McIntyre’s new Asian influenced dishes on the menu. Examples include Scallop ceviche, spring onions, shiso, wasabi-kosho ponzu, Tuna tartar cones, ginger, wasabi, sesame-miso tuille, and Steamed sea bass “Hong Kong” style, chili oil, garlic, ginger.
Head sommelier Vanessa Cinti says: “I have always been fascinated with Japan, its culture and customs. I was introduced to sake via my love of Japanese cuisine and it has quickly become a passion bordering on an obsession. I look forward to introducing our guests to this unique spirit.”
CUT at 45 Park Lane was opened on 1 September 2011 by world-renowned chef and restaurateur, Wolfgang Puck. Fast forward four years and Puck’s first foray in Europe has established itself as a leader on the London dining scene, and was most recently the first London restaurant to re-introduce Japanese Wagyu beef after a three year embargo.
The Sake Flights start at £45 per person, with a glass of sake at either BAR 45 or CUT at 45 Park Lane priced from £10.
