
Cochon555 Waddles Into Miami This Weekend
Miami is the next stop on the US Tour of serious foodie event Cochon555 and they are enlisting some of the city's coolest chefs like Xavier Torres and Todd Erickson.
Pig-centric event, Cochon555 is landing in Miami this weekend with events on Saturday and Sunday. Every year, they tap top culinary talent and for 2015 they’ve got a great line-up that includes Todd Erickson from Haven, Xavier Torres from the hotspot Drunken Dragon, DB Bistro Modern’s Jason Pringle, Lindsay Autry of Fin & Feather, and Richard Hales for Blackbrick.

Saturday’s event begins with a reception and diner hosted at L’Echon Brasserie hosted by Jose Mendin. The main event takes place on Sunday, April 19th at 5pm at Lowes Miami Beach where the five chefs will prepare five different pigs accompanied by five different wines starring the St. Francis Winery. Cochon 555, a 3-year-old culinary tour that celebrates heritage breed pigs, enlists the city’s most famous chefs to compete in a competition. The tour aims to showcase heritage pig breeds and promote and popularize the diverse breeds that range from fields as afar as Hungary, Ireland, New Caledonia and China. As factory-tolerant breeds become the norm, these “exotic” breeds numbers have been dwindling.

So, Cochon aims to save these animals… by eating them. Heritage pigs are typically raised outdoors and allowed to forage and eat natural diets and, with their higher prices, are a bit of a delicacy, albeit a very sustainable one
