French Laundry Chef to Make Move to LA For New Restaurant Venture

After twelve years, French Laundry chef Timothy Hollingsworth has decided to take a break from restaurant work to focus on a new restaurant venture in Los Angeles.
Hollingsworth is currently in the process of training his replacement, chef David Breeden, and will officially serve his last day at French Laundry on March 31, according to San Francisco Grubstreet. His departure plans have been known for quite some time and he is in the process of finding a place to live, possibly in West Hollywood, and plans on “going to start work for a video promotion company” as well as focusing on his plans to refine the “concept of the taqueria,” a chain of “casual-but-upscale Mexican restaurants, inspired by his own travels in Mexico,” which he spoke to Grubstreet about in November.
“I just want to clear my head for a bit, do some surfing. I’ve been in the Napa Valley for so long I kind of what to check things out down there, see what it’s like,” said Hollingsworth.
According to Hollingsworth, it will be “business as usual” at French Laundry for the rest of the month as he serves out his final days at the iconic restaurant.
