John Sedlar has invited three of Baja’s best chefs to create a la carte dishes in conjunction with his new rooftop garden-inspired menu.
A new culinary adventure in Los Angeles will take place on September 16 as some of the region’s best chefs head to Baja. Each chef will be hosting their menus for three nights through the three-week series and Executive Bar Director, Julian Cox, will provide collaborative cocktails, including the release of Playa’s new Baja Punch.
The three selected chefs include Sabina Banderas of La Guerense, who will cook for the first three nights and prepare unique tostadas of sea urchin, sea cucumber and sea snail and one-of-a-kind salsas, nuts and handmade pastes; Benito Molina who will mix Baja ingredients and flavors with an urban twist from his Mexico City roots; and Chef Guillermo “Oso” Campos Moreno who will serve dishes such as halibut ceviche with sour cactus fruit and queso panela with oja santa.
