Fish Farming Brings Russian Caviar Back

Authentic Russian caviar, made from sturgeon, has been out of production for the last 9 years due to the threat of extinction to the species. In the interim, caviar lovers have turned to brands from countries such as China, Canada, and France. New technology and fish farming has people rejoicing at the return and taste of the much beloved Russian Sturgeon.
The way fish farming works is not only more efficient but also more humane. The fish are kept in large tanks and their eggs are harvested through a tiny, nonfatal incision. Afterwards, the fish is placed back in the tank until its eggs are ready for harvesting again. This new method has given Russia the leg up in the caviar business and brought tastier caviar back to the people.
