Five, four, three, two, done! It’s almost time to say goodbye to 2010. Countdown to 2011 at Acqualina Resort & Spa on the Beach, where the charm of a Mediterranean villa meets elegance on the beach. Auld Lang Syne hits the Atlantic coastline on New Year’s Eve, Friday, Dec. 31, from 9 p.m. to 1 a.m.

Celebrate the new year with a sophisticated evening celebration of dinner, dancing and a midnight toast to the promising year ahead. Whether indoors or outdoors beneath the stars, guests are invited to enjoy live music, dancing, open bar and exquisite food selections from around the world at a fail-safe spot, South Florida’s elite seaside sanctuary. Fête 2011 in an al fresco, ultra-luxe environment ideal for dancing and a midnight countdown.

Leave a decadent taste in your mouth as you ring in the New Year at Acqualina.

The five-course seated dinner, $250 per person, offers an array of appetizer selections (cream of parsnip and chestnut with truffled foam; duo of Hudson Valley duck: duck prosciutto, fig confit, seared foie gras, candied pecans in a port wine reduction; and Hombolt Fog goat cheese with micro greens, stiped beets and dried cherry vinaigrette), followed by a choice of entrée selection (roasted sea bass with melted leeks, asparagus, American caviar and Champagne espuma, or duo of beef: grilled tenderloin and braised short rib with roasted pumpkin, fava beans, pignoli nuts and Madeira jus) and a symphony of chocolate desserts.

Get a taste of all corners of the world with an international station buffet style dinner, $200 per person, featuring food from Greece (stuffed grape leaves; grilled red snapper with lemon, black olive, olive oil and oregano; assorted grilled vegetable kabobs), Spain (traditional paella al Valenciana), France (Chateaubriand — roasted filet mignon carved with a variety of sauces, and Tour de France cheese selection with baguette and confiture) Italy (antipasti — assorted marinated vegetables and cured meats and pasta station of gnocchi and tortellini with a choice of pomodoro basil, pesto genovese and alfredo cream) and Morocco (spice-rubbed boneless lamb leg stuffed with dates, pine nuts, dried apricots and herbs accompanied with harissa, lamb jus, chutney and couscous).

A salad station will include freshly tossed Caesar; Caprese salad; mixed green with condiments and variety of vinaigrettes; hummus spread; and assorted rolls, grissini and lavash. Indulge in assortment platters of mini pastries, petite fours and macarons for dessert.

If you don’t come hungry, opt for deejay and open bar only, $95 per person.
