Rome’s Drink Kong has never played it safe. Since opening in 2018, the bar has consistently challenged what a cocktail list can be — and with Flux, its fourth menu, it delivers what may be one of the most innovative drinking experiences of 2025. Ranked No. 33 in The World’s 50 Best Bars and No. 1 in Italy, Drink Kong is already a benchmark for creativity; with Flux, it leans into minimalism, subtraction, and harmony in a way that feels entirely new.

The concept is bold: “Subtract, nothing is everything.” It’s about removing noise to reveal essence, stripping away excess to let pure flavor resonate like a frequency. Patrick Pistolesi, Drink Kong’s co-founder, puts it simply: “Less is not emptiness, but revelation.” Each cocktail is designed as a wave of intertwining flavors — a liquid symphony where every ingredient plays a vital note.

The 29 new creations (plus two house classics, Canova and Gaijin) are divided into three categories: Fundamental (Source), Harmonic (Modulation), and Transcendent (Crossover). Drinks like Shibui — a refined blend of Eminente Rum, nutmeg, maple, and fig leaves — embody discreet beauty and modern minimalism. On the opposite end, Be(e)true(t) pushes boundaries with Silent Pool Gin, ginger, mustard, and beetroot milk, balancing complexity with softness. And then there’s Fear & Loathing in Oaxaca, a green-hued, psychedelic riff on a Kong classic with jalapeño, Espolòn Tequila, and passion fruit.

Visually, Flux is just as daring. Designed by Studio Lord Z, the menu unfolds in a riot of geometric codes, deconstructed typography, and vibrant abstractions meant to echo each drink’s vibrations. Every cocktail is defined by a single word — classic, elegant, umami — accompanied by stripped-back ingredient lists and stylized glass icons. It’s sleek, futuristic, and uncompromisingly Drink Kong.
