Fancy Amaro? This Restaurant Has The Largest Selection In Las Vegas

Fancy some amaro in Las Vegas? If so, you’re in luck — because AMARI, located at UnCommons, has the largest selection in Las Vegas.
As its name suggests, AMARI is rooted in the rich Italian tradition of amaro (Italian for “bitter”), a herbal liqueur long treasured as a post-dinner digestif. With origins dating back to ancient Rome and a legacy that spans centuries, amaro has become a symbol of Italian culture and history.

Here, there are 80 unique varieties showcased on its signature Wall of AMARI near the restaurant’s entrance. This impressive collection includes a wide range of styles, including an extensive lineup of Fernets from around the world, which patrons can sip solo. The rarest on offer include:
- Amaro Ulrich
- Amaro 72 Toro
- Antico Amaro Noveis
- Petrus BooneKamp
- Botanika Angelica
There are also curated amaro flights to explore, which offer a guided tasting through different profiles and styles. These flights highlight the diversity of amaro and allow for an approachable yet educational experience tailored to each guest’s palate.

And last but not least, amaro is incorporated into most of the Italian eatery’s cocktails. Some of our favorites include Luna Rossa: Ketel One cucumber & mint vodka, cucumber, Italicus, lime, and honey; Tuscan Gold: Buffalo Trace bourbon, Amaro Montenegro, lemon, and honey with a sangiovese float; and Fire & Blood: Camarena reposado tequila, Firewater Bitter Vecchio Amaro del Capo “ Hot Chili”, blood orange, and agave.
AMARI’s beverage program was developed under the direction of Miklós Katona, an advanced sommelier who curated a global wine list designed to complement the restaurant’s Italian-inspired culinary offerings, with selections from Italy, France, Germany, Argentina, Hungary, and beyond.
