Carrot Express’ story began with founder Mario Laufer’s vision to bring nutritious, flavor-packed cuisine to Miami Beach at a time when such options were scarce. What started as a small eatery in a gas station on Alton Road has blossomed into a health-driven empire. Now, Carrot Express has made a triumphant return to South Beach with a brand-new space just blocks from its original location, marking an emotional homecoming for the Miami-based brand.

“It’s a surreal moment to reopen within blocks of where it all started,” Laufer shared. “We’re honored to be a part of this community and look forward to serving the neighborhood with some of our tried-and-true dishes, along with our latest menu additions.”
Situated steps from luxury boutiques, fitness studios, and skincare havens, the 1,571-square-foot Sunset Harbour location is thoughtfully designed to cater to every need. Whether guests are looking for a post-workout smoothie, a leisurely lunch, or a quick grab-and-go option, the space provides a welcoming and versatile atmosphere.

The new design features a modern bohemian aesthetic with neutral tones, splashes of green, and earthy accents. Communal counters, cozy booths, and two-top tables offer comfortable indoor seating, while the outdoor patio invites guests to dine al fresco under large orange umbrellas, surrounded by lush greenery.
Carrot Express’ menu continues to deliver its signature mix of nutritious and delicious offerings, now enhanced with an all-day breakfast and a curated coffee and matcha program available from 7 a.m. daily. Highlights include Jessie’s Breakfast Bowl, the gluten-free Carrot Waffle, and Ultimate Croissant Eggwich, among others.
