Eataly’s Flatiron Flagship Reveals New Dining Concept: Alla Pala Pizza & Enoteca

Famous Italian marketplace Eataly has just opened their latest dining concept at their Eataly NYC Flatiron flagship location: Alla Pala Pizza & Enoteca. The latest concept is bringing a new pizza by slice experience to NYC by offering high-quality Roman-style pizza paired with regional Italian wines by the glass or bottle. Eataly experts will help guide you through an enogastronomic journey as you peruse through their nine different Roman-style pizza options. 

Eataly’s pizza alla pala dough consists of a combination of three different flours: farina 00, buratto, and whole wheat, which are all 100% Italian and come directly from the Marino mill. Each pizza is created on its namesake paddle, or “pala,” and baked, as tradition instructs, in an electric oven. Topped with high-quality ingredients selected daily from the Eataly marketplace, the final product is served fresh from the oven on the paddle and features a thick crust and crispy exterior, along with a soft and airy interior.

Along with the highest quality ingredients, each pizza variety will be prepared following a very unique dough recipe that Fulvio Marino, third generation miller of Mulino Marino and Global Head of Bakery at Eataly, created himself.

“I am part of the third generation of a family of millers. I was born in the flour and grains are my daily bread, hence my passion for everything related to dough, bread, and pizza,” said Marino. “Thanks to my experience as both a miller and pizza maker, I have developed unique doughs that truly reflect the wheat growing in the field. This is where my project of pizza alla pala was born, where I studied different doughs that trace the structure of the wheat grain. For me, pizza is a food that can be enjoyed daily, and must above all, be healthy, but also taste good.”

The daytime menu at Alla Pala Pizza & Enoteca will allow guests to choose from four permanent pizza alla pala offerings, three rotating seasonal pizzas, and two weekly specials, including vegetarian options. Permanent menu offerings include Margherita, Funghi, Soppressata, and Tricolore with seasonal and rotating menus ranging from Fiore di Zucchina (Zucchini Flower); Spicy Coppa, Artichoke, Mozzarella, Pecorino e Mint; Heirloom Tomato e Pesto; and Cinque Formaggi (Five Cheese).

Starting at 5 p.m., the evening menu will feature six pizza alla pala options along with four varieties of a new concept of pizza that is taking over Italy: pizza gastronomica. Pizza gastronomica, is an elevated pizza concept of traditional pizza that offers the option for guests to enjoy individual pizza made to order as a chef-driven dish, topped with only elevated and refined high-quality ingredients. Each pizza, made with one of three doughs is selected to complement the epicurean toppings.

In addition to pizza, Alla Pala Pizza & Enoteca will offer a vast range of wines by the glass and up to 70 different options by the bottle. From North to South, the selection made by Eataly’s wine experts includes white, red, rosé, and sparkling spumanti wines which covers the majority of Italy’s regions.

Guests of Alla Pala Pizza & Enoteca will have the opportunity to interact one-on-one with a dedicated wine expert who will take them through the process of designing their own meals with a wine pairing based on their personal taste, creating a truly unique dining experience.
