Petrossian West Hollywood is the favored place for Los Angeles-based caviar lovers, but it’s also about to become a prime place for those who haven’t initiated their caviar taste buds.

The 95-year-old caviar house is now offering “Caviar 301” classes with General Manager and caviar expert Christopher Klapp, who will not only explain how caviar came to be popular, but also how to store it, what flavors you should expect to find and how to draw them out with varying libations. This class begins with a choice of Petrossian’s Caviar Martini, a flute of Champagne, a flute of vodka, or a white wine that changes monthly. Students are then led through a tasting of some of Petrossian’s most expensive caviars from around the world while enjoying a caviar-centric seven-course dinner. The class will take place on the third Thursday of each month beginning at 7:30 p.m. and is priced at $125 per person.

Those who already know caviar may not find the need to take Klapp’s class, but they will be happy to know that the eatery and boutique is now serving brunch. Chef Giselle Wellman is serving up fare such as potato pancakes with crème fraîche and 20g of Transmontanus caviar, caviar atop a smoked salmon bagel and espresso caviar beads on panna cotta. All we can say: noms.

Petrossian Boutique & Restaurant is located among the city’s most fashionable stores on Robertson Blvd. in West Hollywood. Petrossian was founded by brothers Melkoum and Mouchegh Petrossian in the 1920’s, and is known as the established leader in the caviar business. Now, grandson Alexandre Petrossian is evolving the family business by offering guests more affordable ways to enjoy the signature Petrossian experience. The charming restaurant in West Hollywood is a casually elegant destination for lunch, dinner, happy hour, and weekend brunch featuring a selection of French-inspired California cuisine artfully prepared by Executive Chef Giselle Wellman. A boutique area adjacent to the dining room offers guests a way to continue the experience at home and is an ideal shopping destination for host or hostess gifts and customized epicurean gift baskets including tastes of caviar, smoked salmon, foie gras and handmade chocolates.
