Photos: Chayo Mexican Celebrates Its Grand Opening with Jason Giambi, Rick Harrison

Chayo Mexican Kitchen + Tequila Bar celebrated its grand opening at Caesars Entertainment’s brand new retail, dining and entertainment development, The Linq, on Thursday night.

Attendees enjoyed authentic Mexican cuisine by executive chef Ernesto Zendejas, signature cocktails, live sets by DJ Soxxi and rides on Chayo, the sexy mechanical bull.

Chef Zendejas served samples of his signature dishes, including pork sopes, mini lobster tacos and guacamole with pork rinds and pomegranate seeds. VIP guests also sipped on a select few of the 50 tequilas Chayo offers and sampled signature cocktails like the Don Margarita, Señorita, The Office and Chayo Paloma.

Notable guests included baseball star Jason Giambi, Rick Harrison of “Pawn Stars” and Jon Gray, vice president of The Linq.
