
Palm Beach Food and Wine Festival: Southern Hospitality
The Palm Beach Food and Wine Festival is a boutique festival showcasing some of America’s Top Chefs at intimate events in fabulous settings. The Southern Hospitality: Pig and the Goat Lunch held at Pistache in Palm Beach featured courses from their own Chef Julien Gremaud, James Beard Award winner Chef Stephen Stryjewski of Cochon, Bravo’s Top Chef winner Chef Stephanie Izard of the Girl and the Goat and Chef Jennifer Reed of Sugar Monkey.
Here the Chefs showcased their talents using Pig, Goat and Lamb. The Pig Course prepared by Chef Stryjewski was a Seared Pork Shoulder served with Field Peas and Greens. It was so delicious I finished wanting more. The Goat Course prepared by Chef Izard was a Confit Goat Belly, with shaved Fennel and Bourbon Butter Crab. The combination was divine and very fitting for Izard who’s name means goat antelope that lives in the Pyrenees. The Lamb Course prepared by Chef Gremaud was a Braised Lamb Shank Crispy Cigar, with a Sunchoke Puree and Fig Gastrique. Wines were paired by Sommelier Andrew McNamara. It was a fabulous afternoon and I was happy to be a part of it.
