Haute 100 NY Update: Graydon Carter’s Beatrice Inn Revamp Running Late

Graydon Carter knows how to craft an of-the-moment restaurant, but his latest eatery is running behind schedule. The Vanity Fair editor’s Beatrice Inn update was due to open last month, but is still under construction and will have to scramble to meet the current late June deadline. Carter, who previously dusted off Manhattan warhorses the Waverly Inn and Monkey Bar and turned them into celebrity-publishing world clubhouses, is tackling a different beast this time. In its brief life Beatrice Inn all but defined the downtown haute-hipster milieu of the late ’00s, drawing guests like the late Heath Ledger, Lindsay Lohan and Chloe Sevigny (whose brother Paul co-owned the infamously smokey joint).
